I am a sucker for lemon flavor.  Combine that with the simplicity of a a no bake, 5 ingredient dessert and I am giddy with excitement.  

This recipe is a little different than the other no bake cheesecakes that I have on the blog (click here for all my cheesecake recipes!).  To help balance the tartness of the lemon, sweetened condensed milk is used.

4 Tips for the Perfect No Bake Cheesecake

  1. Don’t bake the crust.  Today we are using a pre-made crust but no bake means we aren’t baking at all.  If you decide to make your own crust then just freeze it until set.
  2. Don’t over mix the filling.  Just like a regular cheesecake, we don’t want to incorporate too much air into the cheesecake batter.  For a no bake cheesecake it will make the filling to soft and it will never really set up like you hope.
  3. Use room temperature cream cheese.  A lumpy cheesecake isn’t very appealing.  Making sure your cream cheese is at room temperature will ensure a smooth a creamy cheesecake.
  4. Let the cheesecake chill for the proper amount of time.  Rushing the chilling process can mean a cheesecake that doesn’t hold its shape.  Refrigerating it and not freezing it is the best method.  Freezing a cheesecake can only cause a super hard crust but can also change the texture of the cheesecake mixture.

How to Make a 5 Ingredient No Bake Cheesecake

Using a pre-made graham cracker crust is a great option when you are wanting to make a no bake dessert.  They are delicious, inexpensive and the plastic covering has another use {keep reading and see how}.

Begin the filling for your no bake lemon cheesecake by combining the room temperature cream cheese and the sweetened condensed milk.  A hand mixer works well for this step.

Once the cream cheese and sweetened condensed milk are mixed together and smooth, add the cool whip and carefully mix.  You don’t want to over mix at this point.  The cool whip is what will be giving the cheese cake it’s volume and it can deflate easily.  If you are using a mixer then make sure to be on a low speed.

Finally, add the lemon juice and zest.  Gently mix it into the other ingredients until everything is nicely incorporated and being sure to not over mix.

Pour the prepared batter into the pre-made crust and spread out evenly.  Be sure to spread it out to the edges of the crust.

Here is where that plastic cover comes in handy.  Remove the label, turn it over and it becomes a lid.  Such a great life hack!

Refrigerate your no bake lemon cheescake for at least 2 hours {preferably overnight}.  I like to serve it will a dollop of Cool Whip and a wedge of lemon but it is perfect all on it’s own.

Ingredients

  • 14 oz. can sweetened condensed milk
  • 8 oz. cream cheese {softened}
  • 8 oz. Cool Whip
  • 1/3 cup lemon juice & zest of 1 lemon
  • 1 pre-made graham cracker crust

Additional Ingredients: Extra Cool Whip & Lemon Wedges for toppings

Instructions

  1. In a medium bowl combine sweetened condensed milk and softened cream cheese with an electric mixer until smooth. Add Cool Whip and gently mix it into the milk and cream cheese mixture. Add lemon juice and zest, mix until it is evenly incorporated into the mixture. Do not over mix. Remove plastic from the pre-made graham cracker crust and pour filling into crust. Spread mixture evenly into crust. Refrigerate for at least 2 hours {preferably overnight}. Serve with a dollup of Cool Whip and a wedge of lemon.
