- Ground Beef-I like to use 93% lean so that I don’t have to drain much {if any} fat.
- Onion-diced small and added to the ground beef for a little cooking they add flavor.
- Kidney Beans-adding a creamy texture and body, they are a great addition.
- Black Beans-I love black beans and add them to anything I can!
- Corn-a can of corn is an easy and tasty way to get extra flavor.
- Crushed Tomatoes-a large can of crushed tomatoes gives it great body.
- Salsa-adding salsa is such a great idea because it has so many great ingredients in it.
- Taco Seasoning-All of the flavors you want in one packet!
- Beef Broth-helps thin out the soup and enhance the ground beef flavor.
How to make your Crock Pot Taco Soup
Brown your hamburger and onion in a skillet over medium-high heat until cooked through. Set aside.
- In a crock pot {with a crock pot liner} add kidney beans, black beans, corn and crushed tomatoes.
- Top with a jar of salsa. Any salsa works, you can choose how mild or hot you prefer.
- Add the cooked ground beef and onion mixture that you set aside.
- Top with taco seasoning.
5. Add the beef broth and stir to combine all of the ingredients.
6. Top with the crock pot lid and cook on low for 6-8 hours or on high for 4-6 hours.
7. After the soup has been cooked, remove the lid and stir. You will notice a deeper color.
8. Now all that is left is to scoop and serve!

Crock Pot Taco Soup with Ground Beef
Ingredients
- 1 pound ground beef {I used 93% lean}
- ½ small onion {diced}
- 1-15 ounce can kidney beans {drained}
- 1-15 ounce can black beans {drained}
- 1-15 ounce can corn {drained}
- 1-28 ounce can crushed tomatoes
- 1-16 ounce jar salsa
- 2 -1 ounce pkgs taco seasoning
- 2-14.5 ounce cans beef broth
Topping Ideas: lime wedges, tortilla chips, shredded cheese, cilantro, sour cream, diced avocado, jalepeno slices, sliced green onion, sliced olives
Instructions

In a skillet over medium high heat, cook ground beef until browned. Add diced onion and cook for a minute or two more. Set aside.

In a large crockpot {covered with a liner} add the drained kidney beans, black beans, corn and crushed tomatoes. Add the jar of salsa, cooked ground beef and onion mixture, the taco seasoning packets and finally the beef broth. Stir everything together. Cover crockpot with a lid and cook on low for 6-8 hours or high for 4 hours.
