What goes into this Recipe

- Fresh Strawberries: Choose firm, ripe berries with bright green stems. Make sure they’re completely dry for the best chocolate coating.
- Chocolate Melting Wafers: Using candy melts instead of regular chocolate means you don’t need to temper it. This keeps the whole thing super easy and gives you perfect results every time.
- Valentine’s Sprinkles: Added right after the white chocolate drizzle while it’s still wet. These give your valentine strawberries that extra festive touch.

How to make Valentine Strawberries
- Line a baking sheet with parchment paper or wax paper. Make sure your strawberries are completely dry before starting. This step is important for the chocolate to adhere properly to the berries. In a microwave-safe bowl, melt the dark chocolate wafers starting with 45 seconds, then stir. Continue heating in 20-second intervals, stirring between each, until the chocolate is completely smooth and fluid.
- Dip each strawberry into the melted chocolate, holding it by the stem. Gently shake off excess chocolate and place on your lined baking sheet.

- Continue until all strawberries are coated, creating a single layer with space between each berry. Once the dark chocolate has set, melt the white chocolate using the same method as step 2.
- Drizzle the white chocolate over each strawberry, then immediately add your Valentine’s Day sprinkles. Let the chocolate berries sit at room temperature for about 30 minutes, or refrigerate to speed up the process.

Tips for Dipping Strawberries in Chocolate
- Pat strawberries completely dry. Water is chocolate’s enemy! Even a few drops will make your chocolate seize up and become grainy. Use a paper towel to ensure each berry is totally dry.
- Don’t refrigerate berries before dipping. Room temperature strawberries are best for dipping in chocolate. Cold berries can cause condensation, which will prevent the chocolate from sticking properly.
- Keep chocolate at the right temperature. If your melted chocolate gets too thick, reheat it for just 10 seconds and stir well. Too much heat will make the chocolate grainy and difficult to work with.
- Work quickly with the sprinkles. Add your festive sprinkles right after the white chocolate drizzle, before it sets. Once the chocolate starts to harden, the sprinkles won’t stick.
Storage and Freezing Instructions
Store: These chocolate-covered strawberries should be stored in an airtight container in the refrigerator. For best results, arrange them in a single layer to prevent the chocolate from sticking together. They will last 1-2 days in the fridge, but are best enjoyed within 24 hours of making them.
Freeze: I do not recommend freezing these Valentine strawberries.
Recipe FAQs
While melting wafers are the easiest option, you can also use semi-sweet chocolate chips or your favorite type of chocolate. Just remember that regular chocolate may need to be tempered for the best results and that glossy finish.
While they’re best made the same day you plan to serve them, you can prepare them up to 24 hours in advance. Keep in mind that fresh strawberries may start to release moisture over time, which can affect the chocolate coating.
If your melted white chocolate is too thick for drizzling, add a few drops of vegetable oil and stir well. This will help thin it to the perfect consistency for creating those beautiful decorative lines.
Yes! Pink candy melts are a fun way to make your valentine strawberries even more festive. Use them either as the main coating or for the drizzle design on top of dark chocolate.

Valentine’s Day Chocolate Covered Strawberries
Ingredients
- 24 small fresh strawberries
- 10 ounces chocolate melting wafers {I used dark chocolate}
- 4 ounces white chocolate melting wafers
- ¼ cup Valentine's Day Sprinkles
Instructions
- In a large microwave safe bowl, add the dark chocolate wafers. Start microwaving for 45 seconds, stir and then add 20 second intervals until all of the chocolate is melted and smooth. Take each strawberry and hold either by the green stem or place a toothpick into the top and dip into the melted chocolate. Shake off any excess chocolate and place each strawberry onto a parchment or wax paper lined baking sheet. Continue until all of the strawberries are dipped.
- Once the dark chocolate is set up, go back and drizzle white chocolate {using the same method as above to melt} over the top of each strawberry and add sprinkles immediately. Let the strawberries sit at room temperature for 30 minutes or until the chocolate is set. You can also refrigerate them to allow the process to happen sooner.
