How to make Easy Chocolate Chip Cookie Bars with a Cake Mix

I have an entire post dedicated to all of my cake mix cookie/bar baking tips.  But let me walk you through a couple now.

Whisk or sift the dry cake mix!  Sometimes you will get a mix that is really lumpy and if you don’t get rid of them before you add the wet ingredients then they are there FOREVER.

I knew I wanted to use a Yellow Butter Cake Mix and so that requires…butter!  No wonder these puppies are so good!  

Now because we don’t have to worry about them holding up in a cooking form, melt the butter.  The only thing to be mindful of here is to be careful when you add it to the eggs.  If it is too warm then it will scramble your eggs and nobody wants that.

I prefer using a hand held mixer but you can also mix the batter by hand easily.  Once the batter is nicely incorporated, add the chocolate chips.  

I have used the mini version because I roll like that.  Mini things make me happy because they are sweet and cute but if you want regular sized chocolate chips then go for it!

Mix the chocolate chips in by hand so that they are evenly distributed and then pour the dough into your prepared 9×13 pan.  The mixture will be pretty thick and that is how you want it.  Spread it out into an even layer in the bottom of the pan.

The Secret to the Softest & Chewiest Cookie Bars

Bake the Soft & Chewy Easy Chocolate Chip Cookie Bars at 350 degrees for 20-25 minutes.  You don’t want to over bake them but you will know they are done when the edges begin to pull away from the pan.  The bars will also have a beautiful golden brown color.  

To get the soft and chewy texture that you want, removing them from the oven at this point is really important.  Over baking them {while still delicious} will cause a more dense texture.  Remove from oven and let cool completely before you cut into bars.

Once they are cooled, they cut nicely.  I made large bars and got 12 but you could easily make 24 smaller ones.

Now it’s the very best part…EATING!  Just look at that bite!  I can’t say enough good things about this chocolate chip cookie bars recipe.  In fact, my nephew {and official taste tester, Owen} would like to know when another batch is coming his way.  Enjoy!

You are only 5 ingredients away from the softest and chewiest, Easy Chocolate Chip Cookie Bars. Made with a cake mix, they are a crowd favorite.

Ingredients

  • 1 15.25 oz. box Butter Recipe Yellow Cake Mix
  • 2 large eggs
  • 1/2 cup butter {melted}
  • 2 tsp vanilla extract
  • 3/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350 °. Prepare a 9x13 baking dish by spraying it with non-stick cooking spray, set aside.

  2. In a medium sized bowl whisk or sift the dry cake mix to remove any lumps. To the dry cake mix add the whisked eggs, melted butter and vanilla. Mix together using a hand held mixer {or by hand} until all of the ingredients are incorporated. Add chocolate chips and mix into dough by hand until evenly distributed.

  3. Pour dough into prepared pan and spread into an even layer. Bake for 20-25 minutes or until the edges of the bars are pulling away from the pan and the bars are turning golden brown. But do not over bake. Remove from oven and let cool completely before cutting them into squares. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
