Valentine's Day Chocolate Covered Strawberries

- 24 small fresh strawberries
- 10 ounces chocolate melting wafers {I used dark chocolate}
- 4 ounces white chocolate melting wafers
- ¼ cup Valentine's Day Sprinkles
In a large microwave safe bowl, add the dark chocolate wafers. Start microwaving for 45 seconds, stir and then add 20 second intervals until all of the chocolate is melted and smooth. Take each strawberry and hold either by the green stem or place a toothpick into the top and dip into the melted chocolate. Shake off any excess chocolate and place each strawberry onto a parchment or wax paper lined baking sheet. Continue until all of the strawberries are dipped.
Once the dark chocolate is set up, go back and drizzle white chocolate {using the same method as above to melt} over the top of each strawberry and add sprinkles immediately. Let the strawberries sit at room temperature for 30 minutes or until the chocolate is set. You can also refrigerate them to allow the process to happen sooner.
Valentine strawberries can sit out at room temperature for up to 2 hours during serving. This is perfect for parties or special occasions, but return any remaining strawberries to the refrigerator after this time to maintain freshness.
They will last 1-2 days in the fridge, but are best enjoyed within 24 hours of making them.
