I love using Trader Joe’s cookie butter {although Biscoff will also work} in this recipe and my cookie butter cake because it’s smooth, flavorful, and pairs perfectly with the oats and just a touch of vanilla. It melts beautifully into the sugar and butter mixture, creating a thick, creamy base that sets up perfectly once the cookies cool.

Tips & tricks to achieve the most delicious cookies of your life!

    1. Begin by combining the butter, brown sugar, granulated sugar and milk in a saucepan.  Cook over medium heat until the mixture melts and begins to boil.
    2. Continue to let the mixture boil for 1 minute, being sure to stir the whole time. It will be bubbly and super hot…so be careful! Once the mixture has boiled for 1 minute, remove it from the heat.

    1. Add the cookie butter and vanilla, stir to combine.  This will take a minute because the heat will have to melt the cookie butter.
    2. Then add the salt and oatmeal to the mixture and stir until all of the oatmeal is completely coated. Using a medium cookie scoop, scoop mounds of dough onto a silicone {or parchment} lined baking sheet. Allow the No Bake Cookie Butter Cookies to set up for at least 15 minutes.  You can also refrigerate them to speed up the process.

    Expert Tips

    • Have all of your ingredients measured out before you begin.  This recipe goes quickly and so having all of the items ready and in the right quantities makes the process so easy.
    • Scoop the cookies out quickly or the mixture can start setting up before it is made into cookies.  You can always adjust the amount of oatmeal if you like a cookie that isn’t as dense.
    • Always scoop your cookies onto a silicone mat, parchment or even wax paper.  This helps you be able to remove the cookies so much easier.  Plus…cleaning up is a breeze.
    • Store the cookies with a sheet of wax or parchment paper between each layer.  This will help the cookies from sticking to each other and keep them looking great.

    We add the vanilla extract {or any other extract} off of the heat because they normally contain a small amount of alcohol.

    If we added it over the heat then it would evaporate and the taste would never make the appearance we are hoping for.

    Ingredients

    • ½ cup butter
    • 1 cup granulated sugar
    • ½ cup brown sugar packed
    • ½ cup milk
    • ½ cup Biscoff cookie butter
    • 2 teaspoons vanilla extract
    • ¼ teaspoon salt
    • 2 ¾ cups quick cooking oats

    Instructions

    • Combine the butter, granulated sugar, brown sugar and milk in a medium saucepan. Cook over medium-high heat until it comes to a boil {stirring frequently}. Let the mixture boil for 1 minute while stirring the entire time {we don't want the bottom to burn}.
    • Remove the saucepan from the heat. Add cookie butter and vanilla, stir to combine. When the mixture is smooth add the salt and oatmeal, stir so that the oats are completely coated.
    • Scoop 1.5 tablespoons {a medium cookie scoop} of mixture at a time onto a parchment lined cookie sheet. Let your classic no bake cookies cool until set {about 15 minutes}. Serve and enjoy. Store cookies in an airtight container at room temperature for up to 3 days.
