How to make M&M Sheet Cake Cookies with a Cake Mix

Combine the cake mix, eggs and oil in a medium bowl.  Mix together using a hand held mixer {or by hand}.

Once you have a thick dough, add the mini M&M’s and mix with a spoon to evenly incorporate them into the dough.

Using a medium cookie scoop, scoop mounds of dough onto a silicone {or parchment} lined baking sheet.

Bake in a 350 degree oven for 9-11 minutes.  Remove from the oven and allow the cookies to cool on the baking sheet for at least 5 minutes.

Sheet Cake Cookie Frosting

To make the frosting, add the butter, milk and cocoa to a medium sized saucepan.

Cook over medium heat until the butter is melted.  Remove from the heat and add the powdered sugar.

Whisk until you have a smooth and silky frosting.

Take the frosting and spoon a heaping teaspoon full onto each of the cookies.

Spread it out with the back of a spoon and then sprinkle with a few remaining M&M’s.

Allow the frosting to set up before stacking the cookies on top of each other.  This takes about 30 minutes.

If you can’t wait that long then eat one {or three} while you wait.

CAKE MIX COOKIE BAKING TIPS

  • Use a whisk to break up any lumps in the cake mix before adding the other ingredients.
  • Whisk the two eggs together before adding them to the cake mix.  This is especially important when you are mixing by hand. 
  • Always use a cookie scoop when making cookies because when they are all the same size they bake evenly {see my other cake mix cookie baking tips here}.
  • Do not over bake.  It is so important to remove the cookies before they are totally set.  The difference between a perfectly baked cookie and an over baked cookie is only a minute or two.
  • Allow the cookies to cool on the baking sheet for at least 5 minutes.  The heat from the baking sheet will allow the cookies to continue baking slightly and set up just right.

M&M Sheet Cake Cookies with a Cake Mix

Ingredients

Cookie

  • 1-15.25 oz. box chocolate cake mix {I like chocolate fudge}
  • 2 eggs {whisked}
  • â…“ cup vegetable oil
  • â…” cup mini M&M candies

Frosting

  • ½ cup butter
  • 2 tbsp cocoa
  • 3 tbsp milk {I used 1%}
  • 2 ½ cups powdered sugar

Topping

  • ¼ cup mini M&M candies

Instructions

Cookies

  • Preheat oven to 350 degrees.
  • Combine cookie ingredients in large bowl and mix until completely incorporated.  I like to use a hand held mixer but stirring the ingredients by hand works too. NOTE:  Dough will be thick.
  • Add mini M&M's to the dough and stir in with spoon until they are evenly incorporated.
  • Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a silicone {or parchment} lined cookie sheet.
  • Bake for 9-11 minutes, remove from oven and let cool on cookie sheet for at least 5 minutes before moving them to a cooling rack.  Repeat until all of the dough is baked.

Frosting

  • Combine the butter, cocoa and milk in a medium saucepan over medium heat and whisk until the butter has melted.  Remove from the heat, add powdered sugar and whisk until smooth.
  • Spoon a heaping teaspoon of frosting over each of the cookies.  Use the back of the spoon to spread the frosting out. Sprinkle the top of each cookie with a few additional mini M&M candies before frosting has set up. NOTE: Working on one or two cookies at a time works best.
  • Let frosting set and serve.  Keep your sheet cake cookies in an air tight container at room temperature for up to 3 days.
