Easy No Bake Vanilla Wafer Cheesecake Crust Recipe

This Easy No Bake Vanilla Wafer Cheesecake Crust is by far my favorite to make.  In fact I prefer it to a graham cracker crust any day of the week.  There is something so buttery and a delicious about the Vanilla Wafers, I just can’t quite explain how wonderful they are with a little butter and brown sugar.  It is magical really.  The best part is that I haven’t found a filling that didn’t go with it perfectly.  Keep scrolling to see how you can make it too!

The only problem I ever have with making a Vanilla Wafer Crust is making sure to find a good hiding spot for the Vanilla Wafer Cookies until it is time to use them.

My family loves these babies and so if the box is found it can be gone in approximately 1.2 seconds.  I have learned to always buy two boxes because inevitably one will be devoured before I can use them.

Although I should clarify by saying that when I say my family…I am mostly talking about myself.  And although I have been known to hide things where I can’t find them.  I am always pretty good at locating the Vanilla Wafers.

    How to make a Easy Vanilla Wafer Cheesecake Crust

    This crust is so easy to make.  It literally takes 3 ingredients and 15 minutes which is totally awesome!  

    Our grocery store has been super low on cookies, so I have been having to buy the mini version but normally I get the regular sized cookies.

    Add them to a food processor and pulse until you have a fine crumb {if you don’t have a food processor then add the cookies to a Ziploc bag and smash them with a rolling pin until you have fine crumbs}.

    Pour the crumbs into a bowl.  It is important that most of the pieces are pretty small in order to get a crust that sticks together nicely.

    Add the butter and some brown sugar to the crumbs and mix the ingredients.

    Function of butter in this Vanilla Wafer Cheesecake Crust

    • Butter is used as the glue to keep the crumbs together in this crust.  If we were baking the crust to hold it together then you might get away with a little less butter but because this is a no bake crust, 1/2 cup is necessary.
    • Butter also allows us to not have to grease the spring form pan.  
    • Flavor, flavor, flavor.

    I like using brown sugar instead of granulated sugar because I feel like it gives it such a great flavor.

    NOTE:  If you prefer a crust with less sugar then you can certainly omit it.

    You will end up with a mixture that is wet and will easily stick together.

    Pour it into an ungreased spring form pan.  Because of the butter there is no need to spray the pan.

    Press the crumbs firmly into the bottom of the pan and slightly up the sides.  I just use my fingers for the job but you could also use the bottom of a glass or any other object with a flat bottom and sides.

    Refrigerate your cheesecake crust for at least 10 minutes before adding the filling.

    Ingredients

    • 2 1/4 cups Vanilla Wafer cookie crumbs
    • 1/4 cup brown sugar {lightly packed}
    • 1/2 cup butter {melted}

    Instructions

    • Combine Vanilla Wafer cookie crumbs, brown sugar and melted butter in a bowl. Mix together until everything is nicely incorporated. Pour into a ungreased spring form pan. Press crumbs firmly into the bottom and slightly up the sides of the spring form pan. Refrigerate for at least 10 minutes before adding filling of your choice.
