It is officially pumpkin season and so making a pumpkin cookie is always where my heart is at.

Using a spice cake mix is so awesome because it not only has so many of the ingredients you need for function but also for taste.  There is no need to add any additional spices.

I love being able to only use a handful of ingredients but end up with a cookie that is out of this world tasty!

To make these wonderful Pumpkin Cream Cheese Cookies you are going to need the following ingredients:

  • Spice Cake Mix-this gives you almost all of the functional ingredients you need, as well as the spices.
  • Cream Cheese-make sure it is at room temperature so that it mixes well with the butter and pumpkin puree.
  • Butter-this ingredient needs to be at room temperature as well.
  • Pumpkin Puree-this gives it a great flavor and helps keep the soft texture.
  • Powdered Sugar-an optional ingredient that I love to add to the top of the baked cookies.

How to make Pumpkin Cream Cheese Cookies with a Cake Mix

Making this recipe is really as easy as 1, 2, 3, 4!  I love that because it is perfect for a seasoned cook or a beginning baker.

  1. Combine the softened cream cheese, softened butter and pumpkin puree in a medium bowl.
  2. Mix the ingredients together using a hand held mixer {or by hand} until you have a smooth texture.  
  3. Add the spice cake mix and continue to mix until you have a thick and beautiful cookie dough.
  4. Use a medium cookie scoop to scoop mounds of dough onto a silicone mat {or parchment}lined baking sheet.

Bake them in a 350 degree oven for 9-11 minutes or until the cookies are set but not over baked.  Allow the cookies to cool completely on the baking sheet.

Once the cookies are cool, sprinkle the top of each cookie with powdered sugar.

Substitute for spice cake mix

Sometimes spice cake mixes can be hard to find and so there is an easy way to substitute with a yellow cake mix.

Use a yellow cake mix with the following spices, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon ground ginger and 1/4 teaspoon ground allspice or ground cloves.

This will give you everything you love about using a spice cake mix even if you don’t have one!

Storing your Pumpkin Cream Cheese Cookies

Storing Pumpkin Cream Cheese Cookies is fairly simple.  They store well in an airtight container at room temperature.

However, because they are so soft and moist, keeping them at room temperature is better for only a day or two.   That is because they will stick together easily.

I suggest freezing them with parchment or wax paper between layers if you plan to keep them for longer than that.

Just pull a few out at a time as you want to eat them and defrost at room temperature.

Tips for the PERFECT pumpkin cream cheese cookies

  • Softened Ingredients-making sure that both your cream cheese and butter are at room temperature will allow you to get a nice and smooth cookie dough.
  • Use a cookie scoop-keeping all of the cookies the same size ensures that the cookies will bake at the same rate.
  • Do not over bake the cookies-over baking the cookies can result in a dry cookie that doesn’t have the great texture you want when eating a pumpkin cookie.
  • Allow the cookies to cool completely on the baking sheet-the residual heat from the baking sheet will continue to bake the cookies and help them set up.
  • Sprinkle with powdered sugar-this is totally optional but it adds just the right touch for the perfect pumpkin cookie treat.

Pumpkin Cream Cheese Cookies Made with a Cake Mix

A handful of ingredients {including a spice cake mix and cream cheese} are transformed into the softest and most delicious pumpkin cookies you have ever sunk your teeth into.

Ingredients

  • 1-8 oz brick cream cheese {softened}
  • ¼ cup butter {softened}
  • 1 cup pumpkin puree
  • 1-15.25 oz box spice cake mix
  • ¼ cup powdered sugar {for sprinkling on top after baking}

Instructions

  • Preheat oven to 350°.  Combine the cream cheese, butter and pumpkin puree with a hand held mixer {or by hand} until you have a cream consistency. Add the cake mix and mix until it is well combined and thick. 
  • Scoop heaping tablespoons of dough {using a medium scoop or 1 1/2 tablespoons} onto a parchment {or silicone} lined baking sheet. 
  • Bake for 8-10 minutes or until the edges are set.
  • Remove your pumpkin cream cheese cake mix cookies from the oven and let them cool completely on the cookie sheet. Once cooled sprinkle tops with powdered sugar. Store cookies in an air tight container at room temperature for 1-2 days or freeze for up to 3 months.

Notes

  • If you don't have a spice cake mix use a yellow cake mix and add the following spices. 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon ground ginger and 1/4 teaspoon allspice or ground cloves.
  • If you cookies are baking too thick, use the back of a spoon to spread the dough out slightly before baking.
  • When freezing, place a layer of parchment or wax paper in between layers to make sure the cookies don't stick together.
