I am a huge lover of the crock pot!  So when my sweet Facebook friends spoke then I was all about it.  I used to feel like everything from the crock pot tasted the same but not anymore.

I also think that the invention of the crock pot liner might just be the best of all time.  Does anyone like to clean a dirty crock pot??

What I am really excited about {and need to check my Amazon order} is that I have a new crock pot coming.  This poor crock pot has seen better days but I just keep using it…cracks and all.

I actually have a Slow Cooker Roasted Chicken in that baby right now and I can’t wait to dig in.ย  Although I think that this easy cream cheese potato soup is going on the menu again this week.

How to make Crockpot Cream Cheese Potato Soup

Start by adding the chicken broth and diced potatoes into the crock pot.  Don’t forget the liner!

If you are going to cook it on low then it needs to go for 6-8 hours but if you choose high then 4-5 hours works great.  They key is to cook it until the potatoes are soft.

My favorite ingredient in this soup is the addition of cream cheese.  About 30 minutes before you are ready to serve the Potato Soup, add the cream cheese.

It will incorporate better if it is cut into cubes.   Also, add the heavy cream {or milk}, instant potatoes and seasonings.

Why add Instant Mashed Potatoes to Potato Soup?

The addition of instant mashed potatoes helps slightly thicken the soup and give it an even richer potato flavor.  I like to use the packages that are made with real potatoes.

Stir the soup off and on the entire 30 minutes to be sure that the cream cheese melts nicely into the soup.

Easy Crock Pot Potato Soup with Cream Cheese

Make this easy and delicious Potato Soup right in your crock pot. The addition of cream cheese give it a perfectly creamy texture and taste that your whole family will love.

Ingredients

  • 6 cups chicken broth {or vegetable}
  • 5-6 medium russet potatoes {peeled and diced}
  • 8 oz. cream cheese {cubed}
  • 1 cup heavy cream {or milk}
  • 2 oz. pkg. instant mashed potatoes
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

Toppings

  • 1 1/2-2 cups cheddar cheese {shredded}
  • 6-8 slices cooked bacon {chopped}
  • 3-4 green onions {thinly sliced}
  • 1 cup sour cream

Instructions

  • Line your crock pot with a liner. Add the chicken {or vegetable} stock and potatoes to the crock pot. Cook on low for 6-8 hours or on high for 4-5 hours.
  • 30 minutes before serving, add cubed cream cheese, heavy cream {or milk}, instant mashed potatoes, salt, pepper and garlic powder. Stir to combine. Continue stirring off and on for the remainder of the cooking time to be sure that the cream cheese is melting into the soup and everything is warm.
  • When ready, serve with desired toppings. We love shredded cheese, chopped bacon, sliced green onions and sour cream but there are so many wonderful things you can use. Store leftovers in the refrigerator for up to 4 days.
