This Frozen Burrito Casserole was born out of a need for something easier on busy weeknights when the family was craving enchiladas.. Using frozen burritos and pantry staples as the base, allows you to assemble and bake. No rolling, no filling, and no messy prep required.

Whether you’re feeding a hungry family or just want a quick dinner with minimal cleanup, this casserole is a game-changer. It’s cozy, comforting, and so much easier than traditional enchiladas.  The best part–nobody will know that  you took a few shortcuts.

Recipe Ingredients

Ingredients needed to make frozen burrito casserole.
  • Frozen Burritos-  Choose your favorite flavor of frozen burritos.  There are so many varieties at the supermarket that you are sure to find something your family will enjoy.
  • Enchilada Sauce-  Adjust the spice of the casserole by using the mild or hot variety enchilada sauce.
  • Salsa-  Find a thick and chunky salsa at the grocery store, this will give your casserole extra flavor and texture.

Variations and Substitutions

Burritos: Change up the recipe with different varieties of burritos.  Any chicken, beef, bean burritos or cheese burritos will work wonderfully.  Frozen chimichangas can also be used in the same way and give you a fabulous end result.

Enchilada Sauce: Try using green enchilada sauce or salsa verde for great flavor.  You can also use this homemade red enchilada sauce if you have a bit of extra time.

Salsa: There are so many different salsas. Whether you choose a fresh pico de gallo or grab a jar of salsa with corn this recipe turns out amazing every single time.

Cheese: Cheddar cheese is always a great option but so is Monterey jack or a Mexican blend of cheeses.  The key is to find one that will melt well and give the burrito bake a great finishing touch.

How to make Burrito Casserole with Frozen Burritos

1. Begin by combining the enchilada sauce and salsa in a medium bowl, mix until everything is mixed well.  Next, add about a 1/2 cup of the enchilada sauce mixture to the bottom of a prepared rectangle baking dish. 

2. Place burritos into the 9×13 inch casserole dish in a single layer and top with remaining enchilada sauce mixture.

3.  Pour the remaining red sauce on top of the burritos.  Cover the dish tightly with aluminum foil.

4. Finally, bake it in a preheated oven for 30 minutes.  Remove from the oven, take off the foil covering and top with shredded cheese.  Bake for an additional 5 minutes uncovered or until the cheese is completely melted.

5.  To serve, top the casserole with chopped fresh tomatoes, green onion, sour cream and cilantro.

Serve this easy burrito casserole for a quick lunch or dinner.  This tasty meal can be topped with chopped tomatoes, sliced green onion, cilantro and sour cream.  

Add side dishes like Spanish rice, tortilla chips with salsa, refried beans and this Mexican corn skillet for a complete meal.

You can also serve it with taco toppings like black olives, chopped avocado, black beans, shredded lettuce and seasoned ground beef.  Adding a layer of refried beans to the top is also a great addition.

  • There is no need to thaw the burritos.  Use them from the frozen state and make your life so much easier.  If you end up with thawed burritos the baking time will only need to be about 20 minutes.
  • Place the burritos in a way that they are not overlapping in the dish.  If they are in a single layer the casserole will bake much more evenly and quickly.
  • Add a bit more cheese after you remove it from the oven.  It melts quickly and who doesn’t love more cheese?
  • Serve warm with your favorite toppings for the perfect weeknight meal.  Giving everyone topping options allows each person to customize their own helping.
  • Make this recipe ahead of time and refrigerate until you are ready to bake.  If the burritos are thawed, only bake for 20-25 minutes before adding the shredded cheese to the top.

Storage, Freezing and Reheating

Store:  Refrigerate leftovers covered tightly in plastic wrap or in an airtight container for up to 3 days.  

Freeze:  This casserole will freeze for up to 3 months as long as it is covered tightly or in a good airtight container.

Reheat:  There are a couple of ways to reheat this recipe.  To use the oven, cover with foil and bake at 350 degrees for 20-25 minutes or until heated through.

For the microwave, place individual servings on a microwave safe plate and heat for 1-2 minutes.  Check to see if it is warmed through and add additional 30 second intervals until ready to serve.

Ingredients 

Casserole

  • 8 frozen burritos, {unwrapped}
  • 19 ounces enchilada sauce
  • ½ cup salsa
  • 2 cups shredded cheese

Toppings

  • ¼ cup diced tomatoes
  • 3 green onions
  • 1 cup sour cream
  • ¼ cup cilantro, {chopped}

Instructions 

  • Preheat the oven to 375°. Spray the bottom of a 9×13 pan with nonstick spray.
  • Combine the enchilada sauce and salsa in a small bowl and stir to combine. Add a half cup of mixture to the bottom of the prepared pan. Top the burritos with the remaining enchilada sauce mixture.
  • Place in the oven and bake for 30 minutes. After 30 minutes, remove the casserole from the oven and add the cheese. Continue baking for 5 more minutes or until the cheese is melted.
  • Top with diced tomatoes, sliced green onion, sour cream and cilantro to serve. Store leftovers in the refrigerator for up to 3 days.
