I feel like I have trained my entire life for this series!  Seriously though…my job at the moment is to make copious amounts of chocolate chip cookie recipes in search for the VERY BEST CHOCOLATE CHIP COOKIE.  What could be better than that?  Especially when you literally wake up and go to sleep thinking about cookies {I wish that were an exaggeration}.  This recipe is pretty out of this world amazing.  They are Super Thick Chocolate Chip Cookies, in fact the thickest cookies I have ever made.  Keep scrolling to see how you can make them too.

I was a bit skeptical when I came across this recipe for a number of reasons.  First of all, you use cold butter and I have never made a chocolate chip cookie that way.  Who knew!?

Secondly, they bake at a higher temperature but they don’t bake as long as I thought they would.  I was certain that it would not be enough time.  I was wrong…they were perfect!

The one thing I know about baking is that I will never know everything…it has a constant learning curve.  Maybe that is why I love it so much!

This recipe stood out to me because I absolutely LOVE a huge and thick cookie.  I was also intrigued by the fact that it used cold butter in the dough.  Turns out it was everything I wanted and a bit more.  These babies are GOOD!

How to make the Thickest Chocolate Chip Cookies EVER

Begin by cutting your cold butter into cubes and placing them into your mixing bowl.  Using a stand mixer is a requirement for this recipe because it is going to do some hard work.

Cutting the butter into cubes allows it to work into the sugar much easier.

Add both the brown sugar and granulated sugar to the cubed butter and mix for about 4 minutes on medium speed.

The goal is to cream the butter and sugar together like you normally would with room temperature butter.  

Why use Cold Butter in Cookies?

There are a number of reasons to use cold butter in cookies.  First of all, it speeds things up because you don’t have to wait for your butter to come to room temperature.

It also allows you to have thick, dense cookies without refrigerating the dough because it is already cool from the butter.  You just have to be sure that you don’t overwork the dough because that will warm the otherwise cold butter up.

Then add your eggs to the mixture one at a time until they are completely incorporated into the dough.  This particular recipe doesn’t call for vanilla but you could add a couple of teaspoons if you wanted to.

Once the eggs are mixed in, add the dry ingredients {flour, baking soda and salt} at once and mix until just combined.  Remember, we don’t want to over work the dough and bring the temperature of the butter down.

One of the ways to get super thick chocolate chip cookies is to make really big cookie dough mounds.  Divide the dough into 8 equal pieces and roll each piece into a big round ball.

Place 4 mounds of dough onto a cookie sheet at a time and bake in a 410 degree oven for 10-12 minutes {I baked mine for 12 minutes} or until the cookies are golden brown on the outside.  

Let them cool completely on the cookie sheet.  This allows them to set up and become the dense cookie that you are looking for.

Let me just be real right now and tell you that I probably ate 3 {or 4} of these GIANT cookies all by myself.  So far they are my favorite chocolate chip cookie!  Although it is kind of like trying to choose your favorite child.  I love them all.

Super Thick Chocolate Chip Cookies

A SUPER thick Chocolate Chip Cookie that is loaded with flavor and bakes up perfectly! Who needs anything else?

Servings 8 large cookies

Ingredients

  • 1 cup butter {cold & cut up into small cubes}
  • 1 cup brown sugar {lightly packed}
  • 1/2 cup granulated sugar
  • 2 eggs
  • 3 cups all purpose flour
  • 1 tsp cornstarch
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1 1/2 cups chocolate chips

Instructions

  1. Preheat oven to 410°.

  2. In a large bowl from your mixer, combine the cold cubed butter and both sugars. Fitted with the paddle attachment, mix ingredients on a medium speed for about 4 minutes or until creamy.

  3. Add eggs, one at a time. Be sure to mix well after adding each one.

  4. In a separate bowl combine flour, cornstarch, baking soda and salt. Whisk ingredients together and then add to the butter and sugar mixture all at once. Mix until just combined. You do not want to over mix {this will heat up your butter}. Add your chocolate chips and mix until evenly distributed.

  5. Divide dough into 8 equal pieces and roll each piece into a large ball. Place 4 balls of dough onto a silicone mat {or parchment}lined baking sheet.

  6. Bake for 10-12 minutes {mine took 12 minutes} or until the top is golden brown. Let the cookies cool on the cookie sheet. Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
