How to make White Texas Sheet Cake Cookies with a Cake Mix

Begin by combining the cake mix, eggs and oil in a bowl with a hand held mixer.  I like to whisk the dry cake mix before mixing to be sure and remove any lumps.

The dough will be thick and wonderful!

Then using a medium cookie scoop {or 1.5 tablespoons of cookie dough}, scoop mounds of dough onto a silicone mat {or parchment} lined baking sheet.

Bake in a 350 degree oven for 9-11 minutes or until the cookies just begin to get golden brown on the peaks.

The key is to not over bake the cookies because they will continue to cook once you remove them from the oven.  

Let the cookies cool on the baking sheet for 10 minutes before moving them to a cooling rack.

White Sheet Cake Glaze on the Stove Top

In a sauce pan on the stove top, combine butter and milk over medium heat.  Warm until the butter is melted and the milk is warm.

Remove from the stove top and add the vanilla and powdered sugar.  Whisk until the glaze is smooth and thick.

Spoon a heaping teaspoon of glaze on top of each cookie and spread out to the edges.  I like to use the back of the spoon.

The glaze might seep over the edges of the cookie and that is exactly what you are looking for.

Allow the glaze to cool completely before stacking them on top of each other.

White Sheet Cake Cookies

Delicious white sheet cake is transformed in a soft and delicious bite sized cookie that is made with a cake mix.

Cook Time: 30 minutes

Ingredients

Cookies

  • 1-15.25 oz. white cake mix
  • 1/3 cup vegetable oil
  • 1 egg
  • 2 tbsp sour cream

Frosting

  • 1/2 cup butter
  • 2 tbsp milk
  • 2 1/4 cups powdered sugar
  • 1 1/2 tsp vanilla extract

Instructions

Cookies

  • Preheat oven to 350 degrees.
  • Combine cookie ingredients in large bowl and mix until completely incorporated.  NOTE:  Dough will be thick.
  • Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a parchment lined cookie sheet.
  • Bake for 9-11 minutes, remove from oven and let cool on cookie sheet for 4-5 minutes before moving them to a cooling rack.  Repeat until all of the dough is baked.

Frosting

  • Combine the first 2 frosting ingredients in a small saucepan over medium heat and whisk until the mixture has melted.  Remove from heat, add powdered sugar and vanilla, whisk until smooth.
  • Pour or spoon frosting over cookies.  Use a knife or spoon to move frosting and make sure that each cookie is covered.
  • Let frosting set and serve.  Keep your White Sheet Cake Cookies in an air tight container at room temperature for up to 3 days.
