Although it seems like it might be as simple as a box and a couple of ingredients, there are a few things that can take cake mix cookies to the next level.  I have made 100 + batches, so believe me when I tell you that I know what to do and what not to do.

1. Whisk or Sift the Dry Cake Mix Before Adding the Wet Ingredients. 

Cake mixes tend to be lumpy and so by taking this extra step you are insuring a smooth dry mixture.  The problem with not doing this step…once the wet ingredients are added, the lumps are there permanently.

2.  Whisk the Eggs Before Adding Them to the Dry Mix. 

Cake mix cookie dough is notoriously thick.  Giving the eggs a little assistance before adding them helps immensely when incorporating them into the dough.

3.  Adding Vanilla or other additions {i.e. sour cream} Helps Give the Cookies a Homemade Taste. 

The problem with a cake mix cookie is that they…taste like a cake mix.  Sometimes that works to your advantage but other times you want to add an extra ingredient to give it another element of flavor.  

4.  I mentioned above that the Dough will be Thick but it will also be Sticky. 

I get so many messages making sure that it is the right texture and the answer is, YES.  If the dough wasn’t thick then it would be a cake and we want to change the ingredient ratios enough to turn it into a cookie.

5.  Use a Cookie Scoop to Ensure the Cookies are the Same Size. 

I always preach this step but it is just so darn important.  Especially with a cake mix cookie!  We want all of the cookies to bake evenly and the only way to do make sure that happens is to have them all the same size.

6.  Do Not Over Bake the Cookies. 

There is only a minute or two between a soft cake mix cookie and a hockey puck.  They can over bake so easily and so it is really important to make sure that you are only baking them until they are set and the bottoms are browning.

7.  Let the Cookies Cool Completely on the Cookie Sheet for at least 10 Minutes. 

This one goes back to not over baking them.  We want to take them out a little sooner then you think you need to but then we will keep them on the cookie sheet to continue to set up.  The heat from the pan will keep them baking slightly and help them set up to the soft texture you are looking for.
