Tomorrow is our youngest daughter, Lanie’s 15th birthday.  So it seemed like the perfect time to share these awesome Celebration Texas Sheet Cake Cookies with all of you.

A soft and delicious funfetti cake mix cookie, drenched in a cooked frosting and topped with more sprinkles is perfection in my book.

Steps for Making a Texas Sheet Cake Cookie

1. Empty the dry cake mix into a medium sized bowl and whisk or sift the mixture.  This will eliminate any lumps before we add the wet ingredients.

2.  Add the wet ingredients and stir until combined.  I like to use a hand held mixer for this step but you can totally do this by hand.  I added some sour cream to this recipe just for an extra flavor and softness.

3.  Scoop the dough out onto a parchment or Silicone lined baking sheet.  Using a cookie scoop is really ideal for this step.  Making sure that all of the cookies are the same size helps them bake up evenly.

4.  Remove baked cookies from the oven and let them cool on the baking sheet for at least 10 minutes.  The most important thing to remember is to NOT over bake.  

I know I say this all of the time but truly, the difference between a beautiful soft cookie and a brown blob is only a couple of minutes.  Take them out a little earlier than you think you need to and then let them cool and set up on the cookie sheet.  It works…I promise!

5.  Make the cooked frosting.  This frosting is really so simple to pull together and only takes a couple of minutes.  Some butter, milk, powdered sugar and vanilla extract is all you need.  Heat, whisk and pour.

6.  Spoon the cooked frosting onto the cookies and spread out with the back of a spoon.  When you are adding sprinkles to the top of the cookie you only want to work on one at a time.  Otherwise, the frosting will set before you add the sprinkles and they won’t stick.

7.  Enjoy!  This my friends is the most important part.  Not to mention my favorite.  Store Celebration Texas Sheet Cake Cookies in an air tight container for up to 3 days.

Celebration Texas Sheet Cake Cookies

Ingredients

Cookies

  • 1 box funfetti cake mix
  • 2 tbsp sour cream
  • 1 egg
  • 1/3 cup oil

Frosting

  • 1/2 cup butter
  • 2 tbsp milk
  • 2 1/4 cup powdered sugar
  • 1 1/2 tsp vanilla extract

1/4 cup sprinkles

Instructions

Cookies

  • Preheat oven to 350ยฐ.
  • Combine cookie ingredients in large bowl and mix until completely incorporated.ย  NOTE:ย  Dough will be thick.
  • Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a parchment {or Silpat} lined cookie sheet.
  • Bake for 7-8 minutes, remove from oven and let cool on cookie sheet for 4-5 minutes before moving them to a cooling rack.ย  Repeat until all of the dough is baked.

Frosting

  • Combine the first 2 frosting ingredients in a small saucepan over medium heat and whisk until the mixture has melted.ย  Remove from heat, add powdered sugar and vanilla extract. Whisk until smooth.
  • Pour frosting over cookies, working one cookie at a time.ย  Use a knife or spoon to move excess frosting and be sure that each cookie is completely covered. Top each cookie with a sprinkling of sprinkles.
  • Let frosting set and serve.ย  Keep your celebration Texas sheet cake cookies in an air tight container at room temperature for up to 3 days.

Notes

  • ย For a different flavor add 3/4 tsp. of almond extract to the frosting instead of vanilla.
