This Saucy Turkey Pinwheel Recipe is a spin on the croissant turkey slider recipe I shared a couple of years ago. If there is one thing that I know for certain, it is that people LOVE the combination of turkey, cranberry and cream cheese.
After owning a local deli that served {and still serves} a sandwich called the Saucy Turkey, I quickly realized that Thanksgiving was not the only time of year that people longed for these flavors.
In fact, the sandwich was the most popular one on the menu. Just like I know this Saucy Turkey Pinwheel will be the most popular appetizer at your gathering.

How to make the Cranberry Cream Cheese Spread
Begin by combining the softened cream cheese, mayonnaise, cranberry sauce, garlic powder and chopped chives.
Be sure to mix it well, so that you don’t get chunks of cream cheese in the filling.
Using an offset spatula or knife, spread 1/8 of the mixture onto each of the flour tortillas. You will want an even layer that goes out to about 1/4-1/2 inch from the edge.
How to assemble the Saucy Turkey Pinwheels
Place slices of turkey onto the cranberry spread covered tortilla. To get a good roll, place the turkey to one side of the tortilla.
I used 5 slices but if you prefer more then you could definitely add it.
Now add two slices of provolone cheese over the turkey layer.
To roll the pin wheels, start on the side with the turkey and cheese on it. Roll it very tightly because you don’t want a gap in the center when you slice them.
How to Store Saucy Turkey Pinwheels
Pinwheels are so much better when made ahead of time. The flavors merry together and make them even better.
To store them, wrap each rolled tortilla in plastic wrap separately. You can refrigerate them like that or add all of the wrapped tortillas to a large Ziploc bag.
How to Serve Saucy Turkey Pinwheels
When you are ready to serve the pinwheels unwrap them and cut each tortilla in half. It makes it so much nicer to cut from the middle.
Then you can get even and precise cuts from the best part of Saucy Turkey Pinwheel. I cut them about 1/2″ thick and stopped cutting when I got about 1″ from the end.
The end tends to be hollow, they are a great piece to use as a taste tester.
Now it is just a matter of stacking the pinwheels. Add a few more chopped chives for an added green touch.
Then serve to guests. The flavor is so wonderful! It is truly the perfect appetizer for this time of year. If you are looking for one to take to any kind of party then look no further.
You can make them ahead of time, they cut easily, look awesome displayed on a serving plate and taste even better than they look.
Tips for making your Turkey Pinwheels:
- Start with soft tortillas. This will help with the tortilla cracking when you roll them up.
- Use room temperature cream cheese. So much easier mixing and spreading.
- Be sure to add your turkey and cheese to one side of the tortilla, this will help you get every flavor in every bite.
- Roll them tightly. The tighter they are rolled, the easier they are to cut and the more you get!
- If making them in advance, wrap them in plastic wrap and refrigerate until ready to serve. Then simply remove from the refrigerator, cut, and serve.

Saucy Turkey Pinwheel Recipe
Ingredients
- 8 burrito sized flour tortillas
- 8 oz. cream cheese {softened}
- 1/4 cup mayonnaise
- 1/4 cup cranberry sauce {I used the kind with berries}
- 1/2 tsp garlic salt
- 3 chives {chopped}-{divided}
- 1.5 lbs turkey lunch meat {sliced}
- 16 slices provolone cheese
Instructions
- In a medium bowl combine your softened cream cheese, mayonnaise, cranberry sauce, garlic salt and 2 1/2 tablespoons of the chopped chives. Stir until everything is incorporated and you have a smooth mixture.
- Spread 1/8 of the cranberry mixture onto each of tortillas using an offset spatula or knife. Add 5-6 slices of turkey in a line on one side of the tortilla. Top turkey with 2 slices of provolone cheese.
- Starting on the side that you put the turkey and provolone, begin to roll tightly until you have a long wrap. Cover each tortilla wrap with plastic wrap and store in the refrigerator for at least 1 hour and up to 3 days. {You can store them separately or place them all in a Ziploc bag to keep them in one place}.
- When you are ready to cut, remove them from the refrigerator and cut each wrap in half. Cutting from the middle, cut pinwheels to about 1/2-1" from the end. The end will not be wrapped tight enough, so eat it as a taste tester or keep for a snack later.
- Once your turkey pinwheels are cut into rounds, place them nicely onto a serving try. Sprinkle the remaining chopped chives over the top and serve.

It was a lot of fun! I made the mac n’ cheese and put it in a casserole with bread crumbs on top. I baked it for a little bit and then served it with the toppings {baked chicken, bacon, broccoli, tomato, green onion, jalapenos and extra cheese}. I will be posting about it but it will be later.
