Breakfast for Dinner: Pancake Sausage and Egg Sliders Recipe
As delicious as breakfast can be, I am not someone who believes it is the most important meal of the day {sorry breakfast fans}. That however, doesn’t mean that I don’t love breakfast foods. In fact, when I was growing up breakfast for dinner was one of my favorite meals. I don’t really know what my aversion to breakfast at breakfast time is all about but I have never really loved it. This Pancake Sausage and Egg Sliders recipe however, could be game changer.

When my Tater’s and Tale’s were little {sweet babies} I made them breakfast every morning but the older and more self-sufficient my kids got… the more I stopped making it.
I started relying on frozen waffles, cold cereal and bagels with cream cheese to fill them up but on the weekends I like to surprise my family.
A simple recipe that starts with frozen pancakes sounds perfect to me.

How to make a Breakfast Slider with Frozen Pancakes
This simple recipe starts with frozen Eggo Mini Pancakes {but my pancake recipe would work well too} and I like to bake them, instead of warming them in the microwave.
To get the butter and maple syrup component {without a huge mess} I heated the two ingredients in the microwave for 20-25 seconds.
Brush it liberally on the inside of each warm pancake before adding the other ingredients.
Next turn your attention to the sausage patties {which are the perfect size} on the stove {but you could use frozen and reheat them}.
Then scramble a few eggs with a bit of milk.
Assembling Pancake, Sausage and Egg Sliders
Finally, start assembling! Add a sausage patty to the top of a pancake, add some scrambled eggs to the top of the sausage, then top with another pancake and use a toothpick to keep everything together.
I like to serve them on a platter and have my family grab a few.
They will literally disappear before your eyes, so you might even want to make a double batch.
Every bite of these babies is pure awesome and also…so much FUN!

Pancake Sausage and Egg Sliders
Ingredients
- 16 miniature frozen pancakes
- 8 sausage patties {cooked through}
- 4 eggs
- 1 tbsp milk or cream
- 2 tbsp butter
- 2 tbsp maple syrup
Instructions
- Preheat the oven to 350 degrees. Lay the frozen pancakes on a baking sheet with the bottom of each pancake facing up. While the pancakes are warming up, scramble the eggs with the milk and cook over medium heat, stirring frequently, until the eggs are cooked through. Also, combine the butter and maple syrup in a bowl and microwave for 20-25 seconds or until butter is melted.
- Once the pancakes are warmed through {7-9 minutes} remove them from the oven and brush the bottom of each pancake liberally with the butter and maple mixture.ย To half of the pancakes add a sausage patty and 1/8 of the scrambled eggs.ย Then top with another pancake and use a toothpick to hold in place.ย
- Serve your pancake sausage and egg sliders warm.
Notes
- ย To make them even quicker to make, you could use frozen/cooked sausage patty and warm them in the microwave.
I teach a K-5 functional life skills classroom.we made these and they were a big hit. I helped my older students cooking and flipping the sausage patties and my younger students were able to assemble their own sandwiches. Students were able to practice microwave skills by heating their pancakes. We skipped the syrup and the our eggs were whisked together, fried and folded in quarters. These taste so much like a Sausage MCGriddle. They were a big hit with students and adults. One of my students with a major sensory processing disorder involving food even ate one, minus the sausage. That was a huge accomplishment!
