Ingredients Needed

Graham Cracker Cookie

  • Vanilla Cake Mix-The perfect base for a soft and delicious graham cracker cookie.
  • Brown Sugar-Added to give the cookies a deep and sweet flavor.
  • Graham Cracker Crumbs-A graham cracker cookie needs lots of graham cracker flavor.
  • Butter-Added to give the cookies a great texture and softness.
  • Eggs-An important ingredient when you want your dough to stick together well and create a light soft cookie.

Cheesecake Frosting

  • Cream Cheese-The base for any good cheesecake.  Be sure to use the full fat version.
  • Marshmallow Cream-This thick and sticky ingredient gives the frosting an amazing flavor and cheesecake texture.
  • Powdered Sugar-Added to give the frosting body and sweetness.
  • Salted Caramel-Drizzled over the top of the cookies for both a sweet and salty element.

How to make Crumbl Salted Caramel Cheesecake Cookies with a Cake Mix

  1. In a medium bowl combine the vanilla cake mix, brown sugar and graham cracker crumbs. Whisk to combine the dry ingredients. Add the melted butter and eggs to the dry ingredients and mix using a hand held or stand mixer until you have a thick dough.
  2. Use a ¼ measuring cup to measure out dough and form each dough mound into a large disc. Place 6 onto a silicone mat {or parchment} lined baking sheet.
  3. Bake for 9-11 minutes or until set. Remove from the oven and allow the cookies to cool completely on the baking sheet. Continue until all of the dough is baked.
  4. Once the cookies have cooled, combine the softened cream cheese and marshmallow fluff in a medium bowl with a hand held mixer until smooth. Add powdered sugar and mix until you have a creamy frosting.
  5. Add frosting to the piping {or zipper} bag and cut a large triangle from the end {or corner}. Pipe a hearty amount of cheesecake frosting to the top of each cookie, starting on the outside of each cookie and working to the middle. Continue until all of the cookies are frosted.
  6. Once all of the cookies are frosted, add salted caramel to a piping {or zipper} bag and cut a small triangle from the end {or corner}. Drizzle over the top of each cookie and serve.

Tips for the ultimate Crumbl Cheesecake Cookies

  • Make sure the graham crackers are in fine crumbs before adding them to the cookie dough. 
  • Use a 1/4 cup to measure out the dough so that you get a big cookie.
  • Shape the dough into a large disc before baking.  This will help it bake into a nice round and thick cookie.
  • Allow the cookies to cool completely before frosting.  Otherwise the frosting will melt onto the cookies.

The mini catering sized Crumbl Cookies are so darn cute and you can create them with any of the Crumbl Copycat recipes by using a medium cookie scoop to get your cookie size and baking them for 7-9 minutes.  Otherwise the steps are exactly the same.

Can I use homemade caramel sauce?

If you have a good homemade caramel sauce recipe then by all means use it.  I would be sure that the recipe makes caramel that is smooth, light and will drizzle well.

What brand of Graham Crackers should I use?

I use Honey Maid Graham Crackers but other brands should also work great.  I would however suggest that you purchase the graham cracker crumbs from the grocery store.  You can find them in the pie supply aisle.

Buying the graham cracker crumbs will eliminate the step of having to use your food processor which is awesome.
