Helping you with dinner has become a monthly mission of sorts.  You all know how much I love to bake and so cookies are always on my mind but let’s get real.  Dinner is what we are always trying to figure out.  These Easy Chicken Taquitos are something that I make a lot because it is the perfect vessel for leftover protein.  A handful of ingredients, less than 30 minutes and a hungry house hold is all you need to make these Chicken Taquitos.

I make so many versions of these babies.  I love to use leftover Roasted Chicken and Pulled Pork but ground beef works too.

They might be simple but they are anything but ordinary.  The flavors are perfection.

Adding salsa is great because you get tomatoes, onion and jalapenos with only one ingredient…SCORE!!

How to Make Baked Chicken Taquitos with Only 5 Ingredients

The main ingredient in these babies is the shredded chicken.  Whether you bake your own, use leftovers or buy a rotisserie chicken they will be awesome.

Add the shredded cheese, salsa and cumin to the chicken and mix to combine.

Take about 1/3 cup of filling and place it on our 5th ingredient…fajita sized flour tortillas.

To get a good roll, place the filling on one side of the tortilla in a long line.

Starting at the side with filling, roll them up tightly and place them seam side down onto a baking sheet that has been sprayed with nonstick spray.

Once all of them are rolled and on the cookie sheet, finish by spraying the top of the taquitos with nonstick spray and a nice sprinkling of kosher salt.

Can I Freeze Homemade 5 Ingredient Chicken Taquitos?

Yes, you can freeze the taquitos and now is the perfect time.  Place them in the freezer just like this.

Once the taquitos are frozen solid, place them into a freezer bag and freeze.

When you are ready to eat, follow the baking directions but add a couple of additional minutes {15-20 minutes}.

Bake in a 425 degree oven for 12-15 minutes or until the taquitos are crisp on the outside.

Serving Homemade Baked Chicken Taquitos

I love to stack the chicken taquitos onto a serving tray and add some fun toppings.  Lettuce, tomato and avocado are always a great idea.

Then everyone can grab a few with some sour cream.

They are crisp, delicious and most of all…SIMPLE!  Dinner doesn’t get any better than this.

Easy Chicken Taquitos Recipe with Just 5 Ingredients

Ingredients

  • 2 1/2-3 cups shredded cooked chicken
  • 1 1/2 cups shredded cheese
  • 3/4 cup salsa
  • 1 tsp cumin
  • 10-12 fajita sized flour tortillas

Instructions

  • Preheat oven to 425°.
  • Combine shredded chicken, shredded cheese, salsa and cumin in a large bowl. Mix until everything is evenly mixed.
  • Add about 1/3 cup of filling to the tortilla. Spread the filling out into a log shape and roll tightly. Place seam down onto a cookie sheet that has been sprayed with nonstick cooking spray. Continue until all of the filling is used.
  • Bake taquitos for 12-15 minutes or until the tortillas are golden brown around the edges. Serve with your favorite taco toppings and enjoy. Store leftovers in the refrigerator for up to 4 days.
