How to Make Chicken Taquitos
The main ingredient in these babies is the shredded chicken. Whether you bake your own, use leftovers or buy a rotisserie chicken they will be awesome.

Add the shredded cheese, salsa and cumin to the chicken and mix to combine.

Take about 1/3 cup of filling and place it on our 5th ingredient…fajita sized flour tortillas. To get a good roll, place the filling on one side of the tortilla in a long line.

Starting at the side with filling, roll them up tightly and place them seam side down onto a baking sheet that has been sprayed with nonstick spray.

Once all of them are rolled and on the cookie sheet, finish by spraying the top of the taquitos with nonstick spray and a nice sprinkling of kosher salt.

Bake in a 425 degree oven for 12-15 minutes or until the taquitos are crisp on the outside.

Recipe Variations
- Use your favorite tortillas, both corn and flour tortillas work. If you use corn tortillas, I suggest microwaving them for about 15 seconds so that they are soft enough to roll without cracking.
- Change the protein in the filling and add leftover pulled pork, steak or hamburger.
Pro Tips
- Add salt to the outside of the taquitos before baking to get the taste and texture of tortilla chip.
- Use rotisserie or leftover chicken for the filling.
- Adjust the spice level of the recipe by adding mild, medium or hot salsa.
- Don’t fill the tortillas with too much filling, otherwise they may be hard to roll.
- If the tortilla does not want to stay wrapped, secure with a toothpick.
Can I Freeze Homemade Chicken Taquitos?
Yes, you can freeze the taquitos and now is the perfect time. Place them in the freezer just like this. Once the taquitos are frozen solid, place them into a freezer bag and freeze.
How to Reheat
When you are ready to eat, follow the baking directions but add a couple of additional minutes {15-20 minutes}.

Easy Homemade Chicken Taquitos
Ingredients
- 3 cups shredded cooked chicken
- 1½ cups shredded cheese
- ¾ cup salsa
- 1 teaspoon cumin
- 10-12 small fajita sized flour tortillas
Instructions
- Preheat the oven to 425°.
- Combine the shredded chicken, shredded cheese, salsa and cumin in a large bowl. Mix until everything is evenly mixed.
- Add about ⅓ cup of filling to each tortilla. Spread the filling out into a log shape and roll tightly. Place seam down onto a cookie sheet that has been sprayed with nonstick cooking spray. Continue until all of the filling is used. Before baking spray the top of the taquitos with nonstick cooking spray and sprinkle with salt.
- Bake the taquitos for 12-15 minutes or until the tortillas are golden brown around the edges. Serve with your favorite taco toppings and enjoy. Store leftovers in the refrigerator for up to 4 days.
