I love a delicious and soft chocolate cookie.  They are so tasty and a little different than the standby Chocolate Chip Cookies we all know and love.  Making a chocolate cookie is like breaking the rules a bit but in the very best way possible.  When I think of chocolate, I think of brownies or even cake but not cookies.  That isn’t true anymore!  These Chocolate Cheesecake Cookies are now my new best friend.  The are made with a cake mix, stuffed with cheesecake and then baked to perfection.  Chocolate cookies just got really awesome!

Easy Cheesecake filling for Cookies

The cheesecake filling in this recipe is basically a cream cheese frosting.  It is how you work with the frosting that enables it be baked inside the cookie.

Begin by combining the cream cheese, vanilla, flour and powdered sugar with a hand held mixer {or by hand}.  

Then using a small cookie scoop, scoop mounds of the mixture onto a parchment lined baking sheet.

The most important thing is that we want this mixture to be able to be baked inside the cookies.  So freezing it is essential.

After about an hour in the freezer, you can roll each scoop of the mixture in your hands to make them smooth and ready for the cookie.  Refrigerate until ready to use.

Filled Chocolate Cake Mix Cookies

Now we can turn our attention to the simple chocolate cookie dough.

Combine the chocolate cake mix, melted butter and eggs in a medium bowl and mix until incorporated.  I like to use a hand held mixer but you can do this step by hand.

The cookie dough will be thick and gorgeous!

Assembling Chocolate Cheesecake Cookies

To assemble the cookies, start by scooping mounds of dough onto a silicone {or parchment} lined baking sheet.  I used a medium cookie scoop.

Once all of the cookies are scooped, go back and using the back of the scoop {round part} make an indention into the top of each cookie.

Take one of the cheesecake balls from the refrigerator {or freezer} and press them into the top of the cookie.

To cover the filling, take a scoop {I used a small scoop} and scoop a mound of dough into your hand.

Mold the dough into a thin and round circle that you can put over the top of the filling.

Just be sure that it is large enough to cover the filling.

Using your fingers, manipulate the dough so that it covers the filling and goes down to the bottom cookie.

Then smooth out the where the cookies meet so that you have a smooth edge.

Bake in a 350 degree oven for 11-12 minutes.  Remove from the oven and allow the cookies to cool on the baking sheet.

Be sure you are not over baking the cookies because there is a really small window of time between when the cookies are perfectly soft and hard as a hockey puck.  See all of my cake mix cookie baking tips here.

Once the cookies have cooled, sprinkle with powdered sugar.

Ingredients

Chocolate Cookies

  • 1-15.25 oz. box chocolate fudge cake mix
  • ½ cup butter {melted}
  • 2 eggs

Cream Cheese Frosting Center

  • 4 oz cream cheese {softened}
  • 1 ¾ cups powdered sugar
  • 1 tbsp flour
  • ½ tsp vanilla extract

Topping

  • 1-2 tbsp powdered sugar {FOR SPRINKLING ON TOP}

Instructions

Cream Cheese Frosting Center

  • In a medium bowl combine the filling ingredients and mix them together using a hand mixer or stand mixer.  This will take about 3 minutes.  The mixture will be thick and seem like it isn't going to come together but will eventually become smooth.  Using a small cookie scoop, scoop mounds of frosting onto a wax or parchment lined pan and place in the freezer for at least an hour and up to 2 days.  Before you are ready to use them, take the balls out of the freezer and roll them into a nice round ball.  Place back into the freezer until ready to use.

Chocolate Cake Mix Cookies

  • Preheat oven to 350 degrees.  Once the cream cheese filling has chilled, combine all of the cookie ingredients in a medium bowl, combine using a hand held mixer {or by hand} until everything is well incorporated.  On a greased cookie sheet, use a medium cookie scoop and scoop mounds of dough onto a silicone mat {or parchment} lined baking sheet. Use the back of the scoop and create a divot in the middle of each cooke, place a ball of cream cheese frosting in the middle of the dough.  Take an additional tablespoon or so of dough {I used a small cookie scoop} and mold it into a thin round disc. Place it over the top of the cream cheese frosting and press to cover the frosting completely.  Bake for 11-12 minutes, being sure to not over bake.  Let the cookies cool on the sheet for at least 5 minutes before moving them to a cooling rack. 
  • Once the cookies are completely cool, sprinkle your chocolate cheesecake cookies with additional powdered sugar.  Store in an air tight container at room temperature.  

Notes

*The powdered sugar sprinkle will disappear into the cookie if you store them in an air tight container but that is the best way to keep them fresh.  To serve, just add an additional sprinkle of powdered sugar and eat.
