Chocolate Sandwich Cookies with Cream Cheese Filling

What is better than one cookie? Two cookies sandwiched together with cream cheese frosting. These sweet little Chocolate Sandwich Cookies are like an Oreo, only BETTER. I can’t wait for you to make these chocolate cake mix cookies for yourself.

There are so many wonderful things to say about this cookie! First of all, it is made with a cake mix which makes them super simple, just like my other Chocolate Cake Mix Recipes!
These cake mix cookies are also extra moist and delicious. In fact, my Darb loved them! He is a straight shooter and these cookies DEFINITELY made the blog cut.
Then there’s the chocolate cream cheese combo. It works in my Oreo Raspberry Cheesecake Cookies and my Cherry Cheesecake Chocolate Bundt Cake, so why wouldn’t it work here?

If you haven’t gotten on the cake mix cookie train, then this is the time to hop on. This cookie {and my other Chocolate Cake Mix Cookie Recipes} will completely change your mind!
Using a cake mix is a great way to make cookies at home quickly. The cake mix itself does a lot of the work for you.
I always begin by whisking the mix to remove any lumps. Sometimes you will get cake mix that isn’t smooth and so this helps you end up with a dough that isn’t full of dry bits of mix.

Add the eggs and oil to the whisked mix and combine it with a handheld mixer {or by hand} until everything is nicely incorporated.

The dough will be thick. Using a cookie scoop. Scoop mounds of dough and roll them into a bowl of granulated sugar.

You want the entire cookie to be covered in sugar.

Then you can place them onto a parchment or Silpat lined baking sheet.

Bake cookies for 8-9 minutes at 350 degrees. The most important thing is to not over bake the dough. Cake mix cookie dough can over bake easily and will give you a heavy and super crisp cookie that isn’t tasty.
How to Assemble your Cake Mix Sandwich Cookies
Let them cool on the cookie sheet for 10 minutes before moving them to a cooling rack.

While the cake mix cookies are cooling, combine the butter and cream cheese in a medium bowl. Mix them together with a handheld mixer until smooth. Add vanilla and enough powdered sugar to get a really great texture.
Turn half of the cookies over on their tops and put the frosting into a piping bag {or Ziploc}. Starting at the outside of each cookie, swirl frosting around the cookie. Ending in the center.

Top with the other half of the cake mix cookies to create your sandwich.

They are ready to eat or you can keep them at room temperature in an airtight container for 4-5 days. But here is the thing…they lasted less than 4 hours at my house! An instant hit!

You will notice that this recipe only makes a few large cake mix cookies but you can always use a smaller scoop to get more cookies. I would just reduce the cook time by a minute. Enjoy!

Chocolate Sandwich Cookies with Cream Cheese Filling
Ingredients
Cookies
- 1 box chocolate cake mix, 13.25 ounces
- ¾ cup all-purpose flour
- 2 eggs
- ½ cup butter, melted
- ½ teaspoon vanilla bean paste, or vanilla extract
Cream Cheese Frosting
- ¼ cup butter, softened
- 4 ounces cream cheese, softened
- ½ teaspoon vanilla bean paste, or vanilla extract
- 1¾ cups powdered sugar
Instructions

- Preheat the oven to 350 degrees. Combine the cake mix and flour in a medium bowl and whisk to combine. Add the melted butter, eggs, and vanilla bean paste to the dry ingredients and mix together using a handheld mixer {or by hand} until you have a thick dough. Use a medium cookie scoop to scoop mounds of dough and place them onto a silicone mat {or parchment} lined baking sheet. Bake for 8–10 minutes, or until the cookies are set around the edges but still slightly soft in the center. Allow them to cool completely on the baking sheet.
Cream Cheese Frosting
- Once the cookies have cooled, cream together the butter, cream cheese, and vanilla with a handheld mixer {or by hand} until smooth. Add powdered sugar and continue mixing until the frosting is smooth, thick, and easy to pipe.
Assembly
- Place half of the cookies with the bottom facing up. Pipe or spread cream cheese frosting onto each half. Take the unfrosted half of the cookies and sandwich each one on top of a frosted cookie.
