Cookies
- 1 box chocolate cake mix 13.25 ounces
- ¾ cup all-purpose flour
- 2 eggs
- ½ cup butter melted
- ½ teaspoon vanilla bean paste or vanilla extract
Cream Cheese Frosting
- ¼ cup butter softened
- 4 ounces cream cheese softened
- ½ teaspoon vanilla bean paste or vanilla extract
- 1¾ cups powdered sugar

Preheat the oven to 350 degrees. Combine the cake mix and flour in a medium bowl and whisk to combine. Add the melted butter, eggs, and vanilla bean paste to the dry ingredients and mix together using a handheld mixer {or by hand} until you have a thick dough. Use a medium cookie scoop to scoop mounds of dough and place them onto a silicone mat {or parchment} lined baking sheet. Bake for 8–10 minutes, or until the cookies are set around the edges but still slightly soft in the center. Allow them to cool completely on the baking sheet.
Cream Cheese Frosting
Once the cookies have cooled, cream together the butter, cream cheese, and vanilla with a handheld mixer {or by hand} until smooth. Add powdered sugar and continue mixing until the frosting is smooth, thick, and easy to pipe.
Store in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.
Change up the flavor by switching out your cake mix, frosting, or rolling the edges in mini chocolate chips, mini M&Ms, or sprinkles for a bakery-style look.
