Combine the freeze dried strawberry powder with the cookie crumbs and add the softened butter. Work the butter into the dry ingredients using your hands {or a spoon}. Continue to work it together until everything is evenly coated. Set aside.

Expert Tips

  • Be sure to follow the instructions for melting the chocolate. It seems slow, but chocolate can seize up and become grainy if it is overheated, so it’s necessary to take your time.
  • If you’re short on time, you can refrigerate the strawberry crunch covered strawberries. This will allow the chocolate to set faster.

Strawberries

  • Wash and dry the strawberries, being sure to keep their green leaves. Line a large baking sheet with parchment paper {or wax paper}.
  • In a medium microwave safe bowl, add the white chocolate wafers. Start microwaving for 30 seconds, stir and then add 15 second intervals until all of the chocolate is melted and smooth. Note: This may take awhile but white chocolate burns easily.
  • Take each strawberry and hold either by the green stem or place a toothpick into the top and dip into the melted chocolate. Shake off any excess chocolate and place each strawberry into a bowl of strawberry crunch topping. Continue until all of the strawberries are dipped.
