The most fun thing about the holidays is that you can go all out with desserts.  You know what that means?  That green cookies for St. Patrick’s Day are absolutely acceptable.

My kids always loved when I made food around a holiday.  In fact, these Rainbow Pancakes on March 17th were a celebration requirement.

It is a good thing that I have Practically Homemade now that my children are grown.  It gives me a great excuse to continue to make all of the fun desserts without any children at home.

I think that these Cream Cheese Green Velvet Cookies would also be perfect for my students because they are quick and can be finished in under an hour.

How to make a Green Velvet Cookies with a Chocolate Cake Mix

Green velvet is such a fun way to celebrate St. Patrick’s Day!  With a vibrant green color and chocolate flavor, they really are awesome cookies.

To make them, begin by combining the cream cheese and butter with a hand held mixer.  Once they are creamed together, add the egg and green food coloring, mix to combine.

Finally, add the chocolate cake mix and incorporate until you have a super thick {and beautiful green} dough.

Use a medium cookie scoop, to scoop mounds of the green velvet dough onto a silicone mat {or parchment} lined baking sheet.

Bake in a 350 degree oven for 9-11 minutes.  The cookies are done when the edges are set and the middle is still a little soft.  Remove them from the oven and let them cool completely on the cookie sheet.

It is always so important to not over bake cake mix cookies because it only take a minute to go from soft to super hard.  The great thing is that adding the cream cheese makes the dough a little more forgiving.

Once the cookies are totally cool, sprinkle them with powdered sugar.  I love the contrast of colors…so beautiful.

What happens if I add Powdered Sugar to my Cookies too Soon?

If you add the powdered sugar before the cookies are completely cooled then they will absorb the sugar.  You can always add a little more but if you wait one coat is all you will need.

Green Velvet Cream Cheese Cake Mix Cookies

Green Velvet Cookies are made even more special with the addition of cream cheese but it is the simplicity of the cake mix cookie that takes this cookie to a new level.

Ingredients 

  • 1 box milk chocolate cake mix, {15.25 ounces}
  • 8 ounces cream cheese , {softened}
  • ½ cup butter, {softened}
  • 1 egg
  • 1 ounce green food coloring, {small bottle}
  • ¼ cup powdered sugar

Instructions 

  • Preheat oven to 350°.  Combine the cream cheese and butter with a hand held mixer {or by hand} until you have a cream consistency. Add egg and food coloring. Mix until incorporated. Finally, add the cake mix and mix until it is well combined and thick. 
  • Scoop heaping tablespoons of dough {using a medium scoop or 1 1/2 tablespoons} onto a parchment {or silicone} lined baking sheet. 
  • Bake for 9-11 minutes or until the edges are set, they will appear to be a little under cooked but that is alright.
  • Remove your cream cheese cake mix cookies from the oven and let them cool completely on the cookie sheet. Once cooled, sprinkle tops with powdered sugar.

Notes

Store cookies in an air tight container at room temperature for 4-5 days or freeze for up to 3 months.
