I would normally try to stagger my cookie recipes but you guys…it is my first week back to school and I need cookies!  So two cookie recipes this week it is and I couldn’t be more happy about it.  Especially because this recipe is a no bake cookie and today is so hot.  The best part about these copycat cookies is that they are a take on Trader Joe’s No Bake Cookie Butter Cookies recipe {try to say that three times}.  Cookie butter is my newest obsession and adding it to these cookies is everything.  Keep scrolling to see how easy they are to make.

I had not tried cookie butter until I decided to make these no bake cookies and let me tell you something…it is life changing!

It is like having the creaminess of peanut butter with the taste of a Biscoff cookie in one bite.  I literally melted the first time I tried it.

Then I went back for about 10 scoops and ended up having to buy another jar just so I could make these cookies.

    Begin by combining the butter, brown sugar, granulated sugar and milk in a sauce pan.  Cook over medium heat until the mixture melts and begins too boil.

    Continue to let the mixture boil for 1 minute being sure to stir the whole time.

    It will be bubbly and super hot…so be careful!

    Once the mixture has boiled for 1 minute, remove it from the heat.

    Add the cookie butter and vanilla, stir to combine.  This will take a minute because the heat will have to melt the cookie butter.

    Why do you need to add the Vanilla Extract off of the Heat for this No Bake Cookie Butter Cookies?

    We add the vanilla extract {or any other extract} off of the heat because they normally contain a small amount of alcohol.

    If we added it over the heat then it would evaporate and the taste would never make the appearance we are hoping for.

    Then add the salt and oatmeal to the mixture and stir until all of the oatmeal is completely coated.

    Using a medium cookie scoop, scoop mounds of dough onto a silicone {or parchment} lined baking sheet.

    Allow the No Bake Cookie Butter Cookies to set up for at least 15 minutes.  You can also refrigerate them to speed up the process.

    1. Have all of your ingredients measured out before you begin.  This recipe goes quickly and so having all of the items ready and in the right quantities makes the process so easy.
    2. Scoop the cookies out quickly or the mixture can start setting up before it is made into cookies.  You can always adjust the amount of oatmeal if you like a cookie that isn’t as dense.
    3. Always scoop your cookies onto a silicone mat, parchment or even wax paper.  This helps you be able to remove the cookies so much easier.  Plus…clean up is a breeze.
    4. Store the cookies with a sheet of wax or parchment paper between each layer.  This will help the cookies from sticking to each other and keep them looking great.
    5. Don’t eat more than 3 in one sitting.  Just trust me on that one. 🙂

    Ingredients

    • 1/2 cup butter
    • 1 cup granulated sugar
    • 1/2 cup brown sugar {packed}
    • 1/2 cup milk
    • 1/2 cup Biscoff cookie butter
    • 2 tsp vanilla extract
    • 1/4 tsp salt
    • 2 3/4 cups quick cooking oats

    Instructions

    • Combine butter, granulated sugar, brown sugar and milk in a medium saucepan. Cook over medium-high heat until it comes to a boil {stirring frequently}. Let the mixture boil for 1 minute while stirring the entire time {we don't want the bottom to burn}.
    • Remove saucepan from the heat. Add cookie butter and vanilla, stir to combine. When the mixture is smooth add the salt and oatmeal, stir so that the oats are completely coated.
    • Scoop 1.5 tablespoons {a medium cookie scoop} of mixture at a time onto a parchment lined cookie sheet. Let your classic no bake cookies cool until set {about 15 minutes}. Serve and enjoy. Store cookies in an airtight container at room temperature for up to 3 days.
