This no bake millionaire bars recipe is by far my most favorite no bake dessert…EVER!  The fact that it has both chocolate and pretzels sealed the deal for me.  Sweet and salty desserts make me so darn happy and these bars are exuding happiness.  There are so many things that make no bake desserts appealing.  The fact that they are so simple is always nice, you don’t even have to turn on an oven.  Everything can be done on the stove top.  Making Easy No Bake Millionaire Bars needs to be on everyone’s to-do list.  Grab the recipe and add it to yours.

I have had Millionaire Bars before but knew I wanted to put my own spin on it.  My mind instantly went to pretzels because the texture and salty flavor seemed like such a great choice.

Adding a pretzel to the top of each bar just didn’t seem like enough, so I decided to add them to the shortbread crust as well.  I am so glad that I did!

Millionaire Bars are said to have gotten their name because they are so rich in flavor.  I think that adding the pretzels enhances that even more.

I made them originally for the Super Bowl and have since made them 3 more times.  We can’t get enough of these Easy No Bake Millionaire Bars and I know you will go crazy for them too.

How to make a Shortbread and Pretzel No Bake Millionaire Bar Crust

As always, we are starting from the bottom up.  The crust is the foundation of the Millionaire Bars and makes up a big portion of the cookie.

Add shortbread cookies and pretzels to a food processor and pulse.

Continue pulsing the ingredients until you end up with a crumb mixture that is fairly fine in texture.

If there are a few pieces that are large then pull them out and pop them in your mouth.  You want all of the crumbs to be the same size.

To get the shortbread and pretzel crumbs to come together, add melted butter and mix.

Press the crust into a 9×9 {or 8×8} pan that has been lined with parchment paper.  

I like to line the pan with two strips and create an X in the pan.  This makes it so easy to just pull the finished bars out of the pan and cut them later.

Millionaire Bar Caramel Layer

In a medium sauce pan combine brown sugar, butter and sweetened condensed milk.

Bring the mixture to a boil over medium heat.  Then reduce the heat and stir until the caramel has thickened.

Pour the caramel over the crust and refrigerate until cold {15-20 minutes}.

Finishing the Easy Millionaire Shortbread with Pretzels

Melt semi sweet chocolate with a tablespoon of butter in the microwave for 30 seconds, stir and add 20 second intervals until the chocolate is smooth and creamy.

Pour the melted chocolate over the cooled caramel layer.  While the chocolate is still wet, press the whole pretzels into the top of the bars.  I did 4 pretzels across and 4 down for a total of 16 pretzels.  Refrigerate until chocolate has hardened completely.

When you are ready pull the bars out of the pan using the parchment paper.  Place onto a cutting board and cut into squares, using the pretzels on top as your guide.

Easy No Bake Millionaire Bars

Traditional Millionaire Bars are taken to the next level with the addition of salty pretzels to both the crust and top. These rich and creamy bars really are worth a million bucks.

Ingredients

Shortbread/Pretzel Crust

  • 10.25 ounces shortbread cookies
  • 1 cup mini pretzels
  • ½ cup butter {melted}

Caramel Layer

  • ¼ cup brown sugar {packed}
  • 6 Tablespoon butter
  • 12 ounces sweetened condensed milk
  • ½ tsp kosher salt

Chocolate Layer

  • 7 ounces semi sweet chocolate chips
  • 1 Tablespoon butter
  • 16 mini pretzels

Instructions

  • Line a 9x9 baking pan with parchment paper. Cut two thin pieces and create an X in the bottom of the pan. OR spray the pan with non stick cooking spray.

Shortbread/Pretzel Crust

  • Combine shortbread cookies and pretzels in a food processor and pulse until you have fine crumbs. Add melted butter and stir to combine. Pour the mixture into the bottom of the prepared 9x9 pan and press down into an even layer. Refrigerate until the caramel is ready.

Caramel Layer

  • Combine the brown sugar, butter and sweetened condensed milk in a medium saucepan. Bring the mixture to a boil. Reduce heat and stir until thickened. Pour over the shortbread/pretzel crust and spread out into an even layer. Sprinkle with kosher salt and refrigerate until cold.

Chocolate Layer

  • Melt chocolate and butter in the microwave for 30 seconds. Remove and stir, add 20 second intervals until your chocolate is melted and smooth. Pour over the caramel layer. Add the pretzels to the top in even rows of 4 by 4, or 16 pretzels. Press the pretzels down slightly. Refrigerate until the chocolate has hardened.
  • To serve, remove the bars from the pan using parchment paper. Cut into bars using the pretzels as the guide. Store leftover bars in the refrigerator for up to 5 days.
