I have to admit that I had originally made these Loaded Brownie Pretzel Cookies recipe for myself. But I am absolutely sure that all of you are going to love them too. The combination of chocolate and pretzels is my very favorite! Sweet and salty mixed together in a cookie is pure heaven in my opinion and I can’t wait to see what you think. I have a handful of candy that I LOVE. When I travel I go through a process depending on what the store has available.
I always start with Haribo Gummy Bears. They are hands down my favorite but my second choice is always Chocolate Covered Pretzels! I love those babies.

How to make Cookies with a Brownie Mix
Combine the fudge brownie mix with eggs, oil and extra flour. Mix with a hand held mixer {or by hand} until all of the ingredients are thick and smooth.
The dough will be thick and slightly sticky but the addition of flour will help with the consistency as it is baking.
Add toffee bits, mini chocolate chips and chopped pretzels to the brownie cookie dough.
Other Brownie Cookie Add-In Options
- Peanut Butter or Butterscotch Chips
- Sprinkles
- Chopped Snickers Bars {or candy bar of choice}
- M&M’s
- Crushed Potato Chips {try them sometime…they are awesome}
- Salted Peanuts or Almonds
Stir until everything is evenly distributed in the dough. It is nice to be able to have a bit of everything in every cookie.
Using a medium scoop, scoop mounds of dough onto a silicone mat {or parchment} lined baking sheet.
Take a whole mini pretzel and press it down into the middle of each cookie.
Be sure you are pressing down firmly to help flatten the cookie slightly, as well as adhere the pretzel to the dough. They do break easily though, so do it gently.
Bake your brownie pretzel cookies in a 350 degree oven for 9-11 minutes or until the edges of the cookies are set. They may look a little underdone in the middle but we don’t want to over bake them.
Remove them from the oven and then let them cool on the baking sheet for 10 minutes. Then move to a cooling rack to cool completely.
The end result is a super soft and extra amazing Loaded Brownie Pretzel Cookies that are soft and crunchy. I love the fudge brownie texture in the middle of each cookie.

Loaded Brownie Pretzel Cookies
Ingredients
- 1 box fudge brownie mix
- 2 eggs
- 1/4 cup vegetable oil
- 3 tbsp all purpose flour
- 1/2 cup toffee bits
- 1/2 cup miniature chocolate chips
- 1/3 cup miniature pretzels {chopped}
Instructions
- Preheat the oven to 350ยฐ.ย Combine the brownie mix with eggs, oil and flour in a medium bowl. ย
- Mix using a handheld mixer {or by hand} until everything is well combined and thick.ย Add toffee bits, miniature chocolate chips and chopped pretzels. Stir to combine until everything is evenly incorporated.
- Scoop heaping tablespoons of dough {using a medium scoop} onto a parchment {or silicone} lined baking sheet.ย Take a whole miniature pretzel and gently press it into the top of each cookie.
- Bake for 9-11 minutes or until the edges are set, they will appear to be a little under cooked but that is alright.
- Remove cookies from the oven and let them cool on the cookie sheet for 10 minutes. Move to a cooling rack to cool completely. Store your brownie pretzel cookies in an air tight container at room temperature for 4-5 days or freeze for up to 3 months.
