As a mom of 4 and new grammy, I am always looking for easy to make and delicious breakfast casseroles that will feed a crowd. This Pigs in a Blanket Casserole is on the menu for almost every holiday and sleepover. It is a family favorite and one that you can’t go wrong with.

A Fun Take on Ordinary Sausage Breakfast Casserole

There are a lot of different sausage breakfast casseroles out there but this one is the very best {in my opinion}.

The combination of flavors between the buttery crescent dough, seasoned sausage and egg mixture is so darn good.

Of course, the best part is that the Pigs in a Blanket Casserole comes together in no time.  Making it the perfect recipe for your holiday breakfast.

Ingredients Needed to make this Recipe:

  • Refrigerated Crescent Dough-easy to use, it has a wonderful buttery flavor that compliments all of the other flavors in this casserole.
  • Link Sausage-I used the link sausage that you have to cook but for added convenience you could also use the frozen variety.
  • Shredded Cheese-any flavor that you and your family love will do.
  • Eggs-they create a layer of goodness around each and every pig in a blanket.
  • Milk-we use 1% but whatever you have on hand will work perfectly.  Heavy cream or half and half would work well too.
  • Seasoning Salt-I love seasoning my eggs with season salt rather than kosher salt.  
  • Black Pepper-every good dish has a little bit of pepper for added flavor and spice.

How to Make Pigs in a Blanket Breakfast Casserole

  1. Wrap each link sausage in a triangle of crescent roll dough.  Place the link sausage on the wide part of the crescent roll and roll.  Place in even rows of 8 in a 9×13 baking dish that has been sprayed with nonstick spray.
  2. Top each pig in a blanket with a healthy portion of shredded cheese.
  3. Combine the eggs, milk and seasonings in a bowl {I like to use a clear liquid measuring cup} and whisk until everything is evenly combined.  Pour the egg mixture over and around the pigs in a blanket.
  4. Bake your breakfast casserole in a 375 degree oven for 30-40 minutes.

How can you tell when the breakfast casserole is done?

The Pigs in a Blanket Breakfast Casserole is done when the top is nice and golden brown.  The egg mixture will also be totally set.

To finish the sausage casserole, sprinkle it with a little chopped green parsley for color.

Expert Tips

  • Roll the sausage in the crescent roll tightly.  This helps the casserole bake up well and will give you definition between each pig in a blanket for serving.
  • Don’t forget the cheese.  Shredded cheese makes this breakfast casserole.  It not only adds cheese flavor but it also helps create this wonderful browned top while baking.
  • Be sure to not over bake this breakfast casserole.  Bake just until it is golden brown and the eggs are set.  If you over bake the egg mixture it can become a bit tough.

There are a ton of ways you can change up this recipe and make it your own. Here are a few simple ways to do that.

Meat:  Make this Pigs in a Blanket Casserole with cooked bacon or ham {like this Ham and Cheese Breakfast Casserole}.

Cheese:  I used Colby jack in this recipe but any kind of cheese that your family loves would work perfectly.  Try pepper jack for some added spice or even Monterey jack which melts wonderfully.

Seasonings:  Add your favorite seasonings to the egg mixture.  If seasoning salt and pepper aren’t your thing then add a bit of cajun or Italian seasoning for a wonderful flavor.

Good news, this Pigs in a Blanket Casserole has everything you need to make a complete meal.  So it is perfect served by itself.

Sometimes, however, it is nice to serve breakfast with side dishes and make a complete meal.  In that case I would make a fruit salad {like this 4th of July fruit salad!} and muffins {like these Blueberry Poppy Seed Crumb Muffins} in addition to this breakfast casserole.

Easy Pigs in a Blanket Breakfast Casserole Recipe

Link sausage and refrigerated crescent dough are combined with a perfected seasoned egg mixture to create a super easy and over the top breakfast casserole that everyone will love.

Ingredients 

  • 2 tubes refrigerated crescent roll dough
  • 16 link sausage , {cooked through}
  • 2 cups cheese , {shredded} – I used colby jack
  • 5 large eggs
  • 1 ½ cups milk , – I used 1%
  • ½ teaspoon seasoning salt
  • ¼ teaspoon black pepper
  • ½ teaspoon fresh parsley , {chopped}-OPTIONAL

Instructions 

  • Preheat oven to 375° and spray a 9×13 pan with non-stick cooking spray.
  • Unroll both cans of refrigerated crescent rolls and separate into triangles. Place a cooked link sausage on the wide side of each triangle and roll up. Place into prepared pan {2 rows of 8 crescents}. Top crescents with shredded cheese.
  • In a bowl combine eggs, milk, seasoning salt and black pepper. Whisk to combine and pour over the crescent and cheese mixture in an even layer.
  • Bake for 30-40 minutes or until the egg mixture is completely set and the top is golden brown. Serve warm. Leftovers can be refrigerated for up to 3 days.
