Chocolate Dipped Marshmallows {2 Ingredients}

If you’re looking for the easiest sweet treat that everyone will love, this is it! These Chocolate Dipped Marshmallows are made with only two ingredients, marshmallows and melted chocolate and then you can get creative because the topping possibilities are endless.

I’ve been making these chocolate marshmallows and chocolate covered pretzel rods since I was a kid. Every year during the holidays, my family would set aside a day just for candy making and these marshmallows and chocolate covered peanuts were always part of the sweet lineup. I can still remember carefully dipping each one and picking out the “perfect” toppings to sprinkle on them. It was such a simple tradition, but one I have continued.

As a culinary teacher, I enjoyed using this same recipe with my students. It was the perfect introduction to melting chocolate easily and learning how to work quickly with it. The students had a blast decorating their marshmallow treats, and it gave them a fun, hands-on way to explore basic candy making techniques without complicated steps.

Ingredients Needed

The ingredients needed to make chocolate covered marshmallows.
  • Marshmallows: I like to use the square marshmallows that are made for s’mores but any large marshmallow works well.  If you would rather dip something else, try these chocolate covered strawberries.
  • Melting Wafers: Ghirardelli has a lot of varieties {including white and milk chocolate} that can be found in the chocolate chip section of your local grocery store. As a substitution, you can also melt chocolate chips or almond bark if that is easier for you to find.

Topping Ideas

Sprinkling the top of each marshmallow with rainbow sprinkles, crushed graham crackers, mini candies, coconut flakes, freeze dried fruit, toffee bits or a drizzle of white chocolate gives them extra flavor and flair.

Make holiday marshmallows by using colored sprinkles. They would be a fun addition to Halloween, Christmas or Easter.

How to make Chocolate Dipped Marshmallows

Add the candy melts to a microwave-safe bowl. Use 30 second increments to melt the chocolate, being sure to stir between each set. It is ready when the chocolate is melted and smooth.

Dip the top of each marshmallow in the melted chocolate. Shake any excess chocolate off.

Place the marshmallow onto a piece of parchment paper. If you are adding toppings, work quickly to ensure that they stick to the chocolate while it is still wet.

Allow the chocolate to set up completely before serving the marshmallows with chocolate and sprinkles.

Expert Tips

  • Don’t microwave the chocolate for too long between stirring. The melting wafers can burn, so using 30 second increments will ensure that doesn’t happen.
  • Use white melting wafers to add a white chocolate drizzle after the chocolate has set up. This will add another element of flavor and make them look extra special. Use the same technique to melt the white wafers.
  • Push a cake pop stick {or skewers} into the bottom of the marshmallows and make them marshmallow pops. This allows you to completely cover them in chocolate and makes eating them even more fun.
  • Bag the dipped marshmallows in cellophane bags and tie with ribbon. They make the perfect favor for birthday parties. They are also fun added to an Easter basket or holiday candy box.

Storage and Freezing

Store leftover marshmallows dipped in chocolate in a good airtight container. They can be kept at room temperature for up to 5 days or in the refrigerator for over a week.

Once the chocolate is set up you can add them to a freezer bag and freeze them for up to 3 months.

How many days in advance can I make chocolate-covered marshmallows?

Dip the marshmallows 2-4 days before you need them and store them in an airtight container in the refrigerator until ready to use. They are the perfect make ahead recipe.

Can I melt the chocolate on the stove top?

Yes, use a double boiler or create one using a saucepan with a bit of water and bowl. Add the chocolate and cook over medium heat until it is melted and smooth.

Marshmallows Dipped in Chocolate

Ingredients 

  • 20 large marshmallows, {I used the square s'mores marshmallows}
  • 10 ounces chocolate melting wafers

Toppings {optional}

  • ¼ cup rainbow sprinkles
  • ¼ cup graham cracker crumbs

Instructions 

  • Add the chocolate melting wafers to a microwave safe bowl. Melt chocolate by working in 30 second increments. Stir and continue to microwave until the chocolate is smooth and completely melted. 
  • Dip each marshmallow into the melted chocolate about half way up the marshmallow and place on a parchment lined baking sheet. If you want to add a topping, do so quickly while the chocolate is still wet, that way the toppings will stick to the chocolate.
  • Allow the chocolate covered marshmallows to set up on the baking sheet and serve. To store leftovers, place the marshmallows in a good airtight container at room temperature for up to 5 days.

Notes

  • You can also use melted chocolate chips or almond bark to dip the marshmallows into.
  • Get creative with your toppings.  Mini candies, chocolate chips, toffee bits, freeze dried fruit and other sweets would all be so much fun.
