Easy Pancake Tacos

As a mom of four, I was always looking for creative ways to get breakfast on the table quickly, and this recipe became a favorite in our house.  Pancake Tacos are the ultimate easy and fun breakfast hack, using frozen pancakes as the “tortilla” and filling them with fluffy scrambled eggs and crispy bacon.

The combination of savory eggs and bacon with the sweetness of the pancake makes every bite absolutely delicious—especially when drizzled with warm maple syrup!

Not only are these pancake tacos a lifesaver for busy mornings, but they also make the perfect breakfast for dinner option. There’s something so comforting about serving breakfast foods at night, and these handheld tacos make it extra fun.

Recipe Ingredients

  • Frozen Pancakes – The larger variety of frozen pancakes and not the mini version.
  • Cooked Bacon – This is a great place to use leftover bacon or even buy the precooked bacon in the refrigerated section of the supermarket.
  • Scrambled Eggs – My family prefers scrambled eggs but you could always fry an egg if that is something that you would like better.
  • Shredded Cheese – The flavor of cheese you use depends on what you like and what you have on hand.  
  • Maple Syrup – Can you have pancakes without maple syrup?  I didn’t think so!

How to make Pancake Tacos with frozen pancakes

  1. Gather your filling ingredients.  Cook your bacon {or reheat it}, pour the cheese in a bowl and scramble the eggs.
  2. Warm the frozen pancakes in the microwave or oven.  You could also make pancakes from scratch if you prefer.
  3. Form the pancakes in a V shape like a tortilla for your taco.  This taco holder works well.
  4. Place a piece or two of the cooked bacon into the bottom of the pancake shell.
  5. Top the bacon with scrambled eggs.
  6. The final step is a sprinkling of cheese and warm maple syrup.

Variations

There are so many ways to vary this Breakfast Pancake Taco.  The fillings can really be changed into whatever it is that you and your family love.  So get creative and have Pancake Tacos today.

  • Instead of using bacon you could always substitute it for sausage, ham or even a smoked salmon.
  • If you are going for a vegetarian version, skip the meat and add avocado and salsa to the eggs and cheese.
  • When scrambled eggs aren’t your thing, fry or poach them for a whole new taste and texture.
  • Get creative with the cheese and instead of using something like cheddar, change it up with pepper jack for a spicy twist.
  • Go sweet!  Skip the savory fillings and fill your Pancake Tacos with fresh cut fruit and whipped cream.

Tips

While making Pancake Tacos is a super easy recipe there are still a few things you can do to make them come together quickly.

  • Have your filling ingredients ready so that you can build the breakfast tacos easily.
  • Don’t warm up the frozen pancakes until you are ready to serve them.  
  • Heat the syrup so that it doesn’t bring the temperature of the other Pancake Taco ingredients down when you add it to the top.
  • Make it a Pancake Taco bar and let your family build their own tacos.

Can I use Homemade Pancakes?

Absolutely!  The pancake recipe I used in my Rainbow Pancakes would be perfect for these Pancake Tacos.  You could even add a few mini chocolate chips for a sweet addition.

How to serve

Serve pancake tacos for breakfast or brunch with freshly grated hasbrowns or better yet…make them for dinner, alongside a big fruit salad.

How to store

Pancake Tacos are best served warm the day they are made but if you have leftovers they can be stored in the refrigerator for up to 2 days.

Reheat them in the microwave in 25 second increments until they are heated through.

Pancake Tacos

Frozen pancakes are taken to the next level when they are transformed into the shell of a breakfast taco that is loaded with bacon, eggs, cheese and warm maple syrup.

Ingredients 

  • 8 14.8 ounce Eggo pancakes, {frozen}
  • 8 strips bacon, {cooked}
  • 6 eggs, {scrambled}
  • ½ cup cheese, {shredded}
  • ¼ cup maple syrup

Instructions 

  • Gather your filling ingredients {cooked bacon, scrambled eggs and shredded cheese} and set them out.
  • Heat the frozen waffles in the microwave for 20-30 seconds per waffle or in a 375 degree oven for about 12 minutes.
  • To assemble, use the warmed pancake as your tortilla. Top with a slice of cooked bacon, scrambled eggs and shredded cheese. Then pour warm maple syrup over the top and enjoy.
