Pancake Tacos

Frozen pancakes are taken to the next level when they are transformed into the shell of a breakfast taco that is loaded with bacon, eggs, cheese and warm maple syrup.

Ingredients

  • 8 14.8 ounce Eggo pancakes {frozen}
  • 8 strips bacon {cooked}
  • 6 eggs {scrambled}
  • ½ cup cheese {shredded}
  • ¼ cup maple syrup

Instructions

  • Gather your filling ingredients {cooked bacon, scrambled eggs and shredded cheese} and set them out.
  • Heat the frozen waffles in the microwave for 20-30 seconds per waffle or in a 375 degree oven for about 12 minutes.
  • To assemble, use the warmed pancake as your tortilla. Top with a slice of cooked bacon, scrambled eggs and shredded cheese. Then pour warm maple syrup over the top and enjoy.
