Who knew just how much fun Crumb Cake Bites could be?  I mean, I have to admit that I had an idea!  But it wasn’t until I got these babies baked and we were popping them in our mouths like candy that I really realized just how much fun.  There is something so freeing about eating mini treats because you feel like you can have a dozen of them without guilt.  Of course, there could be a little guilt but not enough to keep you from devouring these sweet little Crumb Cake Bites.  Keep scrolling to see how you can make them too!

We all know that my obsession with cookies is OUT.OF.CONTROL!  Seriously!!  I dream about the darn things but a close second is anything loaded with crumb topping.  Make it a mini treat and you definitely have my attention.

Crumb topping is everything that you wouldn’t want in a friend but EVERYTHING you want piled on top of dessert.  It is flaky, crumbles under pressure and is too good for it’s own good {is that a bad thing?}.

Load that goodness on top of a mini cake and well…you get a bite sized cake that should be against the law.  Then we add a little powdered sugar to the top just to show off.  They are a bit insane but in the very best way possible!

How to Make Crumb Cake Bites with a Cake Mix

Combine yellow cake mix, butter, eggs and sour cream.  Mix with a handheld mixer until you have a dough that is has came together into a smooth consistency.

The dough will be thick and fairly sticky but that is alright.  We are baking them in a mini muffin pan.

Spray a mini muffin pan generously with non-stick cooking spray.  Using a small cookie scoop, scoop mounds of dough into each cup.

Use your finger tips to press down the tops and make them flat.  If the dough is sticking to your hands then get your fingers slightly wet or floured.

Then use the end of a wooden spoon and press down the middle of each scoop.  You want a large enough indention to fill it with crumb topping.  I had to flour my wood spoon handle to keep the dough from sticking to it.

How to Make an Awesome Crumb Topping for your Crumb Cake Bites

To make the crumb topping, combine the butter, brown sugar, flour and cinnamon.  Use a fork or pastry cutter to press the butter into the other ingredients until you have a crumb like mixture.

Be sure that you do not over work the crumb mixture because you will end up with a paste.  I will sometimes just use my hand to get the right consistency.

Now take a 1/2 tablespoon or so of crumb topping and put it on top of each scoop of batter.  Be sure you are filling the hole you made with the wooden spoon and also piling the top with additional crumb mixture.

Bake the Crumb Cake Bites in a 350 degree oven for 9-10 minutes or until the cake is set and the crumb topping has baked into the cake.

Remove from the oven and immediately take an off-set spatula {or regular knife} and run it around the edges of each bite.  We want to be sure and loosen each one before we let them cool.  That way we don’t have to worry about them sticking to the pan.

Once they have cooled, you can move the Crumb Cake Bites to a cooling rack and continue baking the next batch.

I like to finish them with a sprinkling of powdered sugar because I think it makes them look extra special.  Be sure you are doing this step to cooled bites because if they are warm then the powdered sugar will dissolve from the warmth into the crumb cake.

Crumb Cake Bites

Everything you love about crumb cake are baked into mini Crumb Cake Bites that are so much fun and out of this world delicious.

Ingredients

Cake

  • 1-15.25 oz. box yellow butter cake mix
  • 1/3 cup butter {softened}
  • 2 eggs
  • 2 tbsp sour cream

Crumb Topping

  • 1/4 cup butter {softened}
  • 1/2 cup brown sugar {packed}
  • 1/2 cup all purpose flour
  • 3/4 tsp cinnamon

Instructions

Cake

  • Preheat oven to 350 degrees.ย  Prepare mini muffin pan by spraying each cup with non-stick cooking spray.ย  Pour yellow butter cake mix into a medium bowl and whisk {or sift} to remove any lumps.ย  Add softened butter, eggs and sour cream to the cake mix and combine with a hand held mixer {or by hand} until mixture is thick and sticky.ย  Using a small cookie scoop {or 1/2 tbsp.}, put a mound of batter into each muffin cup.ย  Using your fingers, go back and press the mound of batter down to create a level cookie.ย  Now, using the end of a wooden spoon {that has been floured} press down in the middle of each mound to create an indention to hold the crumb mixture.
  • In another bowl combine the crumb topping ingredients and cut them together.ย  Be sure to not over mix into a paste.ย  Sprinkle about 1/2 tablespoon of crumbs over the top of each bite, being sure to fill the indention you just made. Bake for 9-10 minutes or until the bites are golden brown.
  • Remove from the oven and use an off-set spatula {or knife} to run around the edge of each bite. This will release each of the Crumb Cake Bites, so that they don't stick. Let them cool in the pan for 5-7 minutes and then move to a cooling rack. Continue to bake your second batch of batter.
  • To serve, sprinkle each cake with powdered sugar. These crumb cake bites are amazing served both warm and at room temperature. Store in an air tight container at room temperature for up to 5 days or freeze without powdered sugar for up to 3 months.

  1. This recipe sounds easy and delicious. If I don’t have muffin pans, do you think this would work in either a 9×9 or 9×13 pan? Not as cute for presentation I know but we work with what we have sometimes.

    1. Yes, that would work. I would bake it at 350 degrees for 30-35 minutes. ๐Ÿ™‚
