Easy Turtle Pecan Cookies

A cake mix is transformed into a soft and delicious chocolate cookie that is full of creamy caramel and wrapped in chopped pecans.

Ingredients

Chocolate Cookies

  • 1 box chocolate cake mix {13.25 ounces}
  • cup vegetable oil
  • 2 large eggs
  • 20 Rolo candies {unwrapped}
  • ¾ cup pecans {chopped}

Toppings

  • ¼ cup chocolate melting wafers {melted}
  • 20 pecan halves {halves}

Instructions

  • Preheat the oven to 350 degrees.

Chocolate Cookies

  • Combine the cake mix, vegetable oil and eggs in a large bowl and mix until completely incorporated.  NOTE:  Dough will be thick.
  • Using a medium sized cookie scoop {or heaping tablespoon} and scoop dough into your hand. Make an indentation in the middle of the dough and add a Rolo candy. Use your fingers to press the dough around the candy to cover it and roll the dough into a ball.
  • Next, roll the filled cookie dough ball in the chopped pecans and place onto a silicone mat {or parchment paper} lined baking sheet.
  • Bake for 9-11 minutes or until the cookies are set. Remove from the oven and let the cookies cool completely on the cookie sheet. Repeat until all of the dough is baked.

Toppings

  • Finally, drizzle melted chocolate over the top of each cookie. While the chocolate is still wet, add pecan halves to the top of each cookie.
  • Let frosting and chocolate set completely and serve.  Keep your Texas sheet cake cookies in an airtight container at room temperature for up to 3 days.

Notes

  • If the cookie dough is sticky, flour your hands before working with the dough.
  • Add two Rolo candies to the middle of each cookie for extra caramel flavor.
