Easy Turtle Pecan Cookies
A cake mix is transformed into a soft and delicious chocolate cookie that is full of creamy caramel and wrapped in chopped pecans.

Chocolate Cookies
- 1 box chocolate cake mix {13.25 ounces}
- ⅓ cup vegetable oil
- 2 large eggs
- 20 Rolo candies {unwrapped}
- ¾ cup pecans {chopped}
Toppings
- ¼ cup chocolate melting wafers {melted}
- 20 pecan halves {halves}
Chocolate Cookies
Combine the cake mix, vegetable oil and eggs in a large bowl and mix until completely incorporated. NOTE: Dough will be thick.
Using a medium sized cookie scoop {or heaping tablespoon} and scoop dough into your hand. Make an indentation in the middle of the dough and add a Rolo candy. Use your fingers to press the dough around the candy to cover it and roll the dough into a ball.
Next, roll the filled cookie dough ball in the chopped pecans and place onto a silicone mat {or parchment paper} lined baking sheet.
Bake for 9-11 minutes or until the cookies are set. Remove from the oven and let the cookies cool completely on the cookie sheet. Repeat until all of the dough is baked.
Toppings
Finally, drizzle melted chocolate over the top of each cookie. While the chocolate is still wet, add pecan halves to the top of each cookie.
Let frosting and chocolate set completely and serve. Keep your Texas sheet cake cookies in an airtight container at room temperature for up to 3 days.
- If the cookie dough is sticky, flour your hands before working with the dough.
- Add two Rolo candies to the middle of each cookie for extra caramel flavor.
