- 2 Tablespoon olive oil
- 1 pound ground beef
- 2 cloves garlic {minced}
- 15 ounces black beans {drained & rinsed}
- 10 ounces Rotel
- 1 cup frozen corn
- 2 cups cooked rice
- 19 ounces enchilada sauce
- ½ teaspoon chili powder
- 1 teaspoon cumin
- 1½ teaspoon salt
- ½ teaspoon black pepper
In a large skillet over medium high heat, cook onions in olive oil until they are softened. Add ground beef and cook until no longer pink. Stir in garlic and cook for 30 seconds.
Once the ground beef is cooked through add black beans {drained and rinsed} and can of Rotel, stir to combine. Add corn to mixture and combine.
Next add cooked rice and stir. Finally add in enchilada sauce and seasonings. Stir until everything is combined and cook for 5-10 minutes.
Serve with your favorite toppings and ENJOY!
