Ingredients

Graham Cracker Cookies

  • 1 box white cake mix 13.25 ounces
  • ¼ cup brown sugar lightly packed
  • 1 ¼ cups graham cracker crumbs
  • ½ cup butter melted
  • 2 large eggs

Apple Pie Filling

  • 2 large Granny Smith Apples diced
  • 2 Tablespoons butter
  • 2 Tablespoons brown sugar lightly packed
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cloves

Topping

  • ¼ cup caramel sauce
  • 12 small scoops vanilla ice cream optional

Instructions

  • Preheat the oven to 350°.

Graham Cracker Cookies

  • In a medium bowl combine the vanilla cake mix, brown sugar and graham cracker crumbs. Whisk to combine the dry ingredients.
  • Add the melted butter and eggs to the dry ingredients and mix using an electric mixer until you have a thick dough.
  • Use a large cookie scoop to scoop cookie dough. Roll the cookie dough into a ball and form each dough mound into a thick disc. Place 6 onto a silicone mat {or parchment} lined baking sheet. Bake for 10-13 minutes or until set. Remove from the oven, make an indentation in the middle of each cookie  and allow the cookies to cool.  Continue to bake the last 6 cookies.

Apple Pie Filling

  • Combine diced apples, butter, brown sugar, cinnamon and ground cloves into a small saucepan. Cook over medium heat for 4-5 minutes or until tender. Remove from heat.

Assembly

  • Top the cooled cookies with about a tablespoon of apple pie filling and drizzle with caramel topping. Serve with a small scoop of vanilla ice cream if desired.

Notes

Cookies are best assembled right before serving. Store unfilled cookies in an airtight container at room temperature for up to 3 days, and refrigerate the apple filling for up to 4 days. Unfilled cookies can be frozen for up to 3 months.
