Place cheese stick halves in a single layer onto a parchment or wax paper lined baking sheet and freeze for at least 15 minutes. When ready to bake preheat oven to 400 degrees. Fill three bowls, 1-with flour, 2-with eggs and 3-panko with seasonings {I like to put the three bowls onto a cookie sheet for easy cleanup}. Working 1 stick at a time. Dip cheese stick into flour and shake off any excess, move to egg mixture and then to panko. Roll and pat to coat cheese stick with panko and place onto a baking sheet that has been prepared by covering it with aluminum foil and spraying with non-stick spray. Repeat until all of the sticks have been coated. Place back into the freezer for 15 minutes. Remove from freezer, spray tops of cheese sticks with non-stick spray and bake for 8-9 minutes or until cheese is heated and crumbs are golden brown. Let them set for 2-3 minutes before serving with warm pizza sauce.
