Preheat the oven to 375°F and grease a 9x13 pan. Mix enchilada sauce and salsa in a small bowl, then spread half a cup of the mixture in the pan before topping the burritos with the remaining sauce mixture.
Continue baking for 5 more minutes or until the cheese is melted.
Place in the oven and bake for 30 minutes. After 30 minutes, remove the casserole from the oven and add the cheese.
Store leftovers in the refrigerator for up to 3 days.
Top with diced tomatoes, sliced green onion, sour cream and cilantro to serve.
