Starting with a fabulous M&M Cookie is the first place to start and this recipe is awesome! Not only do you not need an electric mixer but the dough is also no chill.

That means you can have fresh ice cream sandwiches in no time. These home-style cookies are perfect anytime of the year but are especially fabulous for summer picnics, movie nights, birthday parties or an ice cream party. 

What goes into this Recipe

The ingredients need to make M&M cookies.
  • Melted Butter- Using melted butter in the dough allows you to not need a mixer.
  • Brown Sugar- Adding more brown sugar than granulated sugar gives you soft and chewy cookies.
  • Mini M&M’s Candy- The small version of everyone’s favorite candy makes for the perfect add-in ingredient. They are also a colorful way to add awesome chocolate flavor.
  • Store Bought Ice Cream- Using rich vanilla ice cream in the middle of these cookies is the perfect way to enhance the flavors without competing.

Variation Ideas

Add-in Ingredients- If M&M’s minis milk chocolate candies are not your favorite try another item. Mini chocolate chips, chopped nuts, chopped candy bar and sprinkles all work great.

Ice Cream- Vanilla ice cream is an obvious choice for this cold treat but you can go wild and use any flavor of ice cream. Chocolate ice cream, rocky road, peanut butter and strawberry would all be delicious.  If you want to watch calories you can also use a low fat ice cream.

1. Start with the homemade cookies by making the M&M Cookie dough.  Use a medium cookie scoop to scoop dough out onto a silicone mat {or parchment paper} lined baking sheet.

2. Bake in a 350 degree oven for 9-11 minutes or until the cookies are set and have a slight golden brown color.

3. While the cookies are baking, scoop the vanilla ice cream to a quarter sheet pan {or 9×13 baking pan}.

4. Spread the softened ice cream out into an even layer and freeze for at least 20 minutes.

5. After the ice cream has refroze, use a 3 inch cookie cutter to cut rounds from the ice cream. Freeze again for 15-20 minutes.

6. Once the cookies are cool and the ice cream is frozen, add an ice cream round to a cookie that has been turned over on its top. Then top with another cookie. Continue until all of the cookies have ice cream and freeze until ready to eat.

Expert Tips

  • Use a cookie scoop to keep all of the cookies the same size. This will not only allow the cookies to be baked evenly but also helps when assembling the sandwiches. If you prefer large cookies use a large cookie scoop and bake for 11-13 minutes.
  • Be sure that the cookies are totally cooled before adding the ice cream. Otherwise the ice cream will melt.
  • Do the ice cream step ahead of time to speed up the process. It will allow it to have plenty of time to harden.
  • Roll edges the assembled ice cream sandwiches in additional mini M&M’s for even more delicious fun.  It creates fun ice cream sandwiches. You can also roll them in chopped nuts, mini chocolate chips or any other ingredient you love.

Storing and Freezing

Store- M&M’s Ice Cream Sandwiches must be stored in the freezer. Individually wrap them in plastic wrap or wax paper so that you can eat one at a time.

Freeze- The ice cream treats can be frozen for up to 2 months.

Who makes M&M ice cream sandwiches?

You can purchase them from the freezer section of the grocery store but I love being able to use this M&M Cookie to make this version.

Do I have to use M&M Cookies?

No, you don’t have to use delicious m&m’s candy-filled cookies.  In fact, almost any cookie with a chewy center would work wonderfully. 

Try this Snickerdoodle cookie, Peanut Butter Cookie or chocolate chip cookies for a fun twist. Chocolate cookies and scrumptious sugar cookies would also be amazing.

Can I use homemade ice cream?

Absolutely! I am not sure that a no churn ice cream will work as well because it doesn’t freeze hard enough but a traditional homemade ice cream should work.

Ingredients

  • 1 cup butter {melted}
  • 1 cup brown sugar {packed}
  • ½ cup granulated sugar
  • 2 eggs
  • 1 ½ teaspoons vanilla extract
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cups mini M&M's
  • 5 cups vanilla ice cream

Instructions

  • Preheat the oven to 350 degrees.
  • Microwave the butter for about 40 seconds to just barely melt it. If there is still a piece of butter that isn't melted then swirl it until it melts {you don't want the butter to be hot or the eggs will curdle}.
  • Add both sugars and mix until creamy {by hand works great}. Add the vanilla and the egg, mix until incorporated but do not over mix or the dough will be stiff.
  • Add the flour, baking soda, and salt. Mix until everything is incorporated. Add the chocolate chips and stir until they are evenly distributed.
  • Scoop the dough with a medium scoop {or about 2 tablespoons} into your hand and roll until smooth. Place on a silicone {or parchment} lined baking sheet and add a few additional mini chocolate chips to the top {if desired}.
  • Bake for 9-11 minutes. You want to remove them from the oven when they are puffy and just starting to turn golden. The key to getting the super soft cookie is to not over bake them. Once you remove them from the oven add a few additional mini M&M's to the top of each cookie and let them cool completely on the cookie sheet {if you can wait that long}. This will allow them to set up perfectly.
  • While the cookies are baking scoop the ice cream onto a quarter sheet pan {or 9×13 pan} and spread into an even layer. Freeze for at least 30 minutes. After it is refrozen, remove the ice cream from the freezer and cut 12, 3 inch circles.
  • Turn half of the cookies on their tops and add a circle of ice cream. Then top with the remaining cookies. Freeze until ready to eat. Store in freezer for up to 2 months.
