Begin with a yellow cake mix.  Add melted butter, a couple of eggs and flour, mix together with a hand held mixer.

You will end up with a beautiful dough and all that it needs is miniature chocolate chips.

Add the chocolate chips to the dough and mix until the chocolate chips are distributed evenly throughout the dough.

Why is it Important to use a Cookie Scoop when Baking Cookies?

To bake the cookies, use a medium cookie scoop and scoop mounds of dough onto a silicone {or parchment} lined baking sheet.

I highly recommend using a cookie scoop because it keeps all of the cookies the same size.  This allows each cookie to bake at the same rate.

When cookies are different sizes you will have some that are over baked and a few under baked on the same tray.  This way each cookie is just right.

In 9-11 minutes you have a pan of piping hot and beautiful cookies.

My Biggest Tip for Baking Cake Mix Cookies…

Be sure to not over bake the cookies though.  We want a soft cookie and so taking the cookies out of the oven when they are set is exactly what you want to do.

Using a cake mix is such a great idea but the difference between a perfectly baked cookie and a hockey puck is only a minute or two.

Then let the cookies cool completely on the baking sheet.  Cooling them on the baking sheet allows the cookies to continue baking slightly and set up perfectly.

While the cookies are cooling, turn your attention to the awesome cooked chocolate frosting.

In a medium saucepan, combine butter, cocoa powder and milk.

Once the mixture is melted remove from the heat and add the powdered sugar and vanilla.  Whisk until you have a super thick and totally delicious frosting!

I like for the frosting to cascade over the cookies in an easy sort of way.

In order to do that, putting the cookies onto a cooling rack that is over a cookie sheet works best.  That way the cookie sheet will collect the extra frosting.

Spoon a heaping teaspoon of frosting on top of each cookie and spread it out slightly.  You want it go over the edges but it doesn’t have to cover the cookie completely {unless you want it to}.

Add a few additional mini chocolate chips to the top of each cookie for even more goodness.

In about 30 minutes the frosting will set up and be ready to serve.  Although we both know I didn’t wait that long.

Easy Chocolate Chip Sheet Cake Cookies

Chocolate Chip Cookies are taken to the next level when they start with a cake mix and end with a cooked chocolate frosting.

Ingredients

Cookie

  • 1-15.25 oz. box yellow cake mix
  • 2 eggs
  • 1/2 cup butter {melted}
  • 2 tbsp flour
  • 1/2 cup miniature chocolate chips, plus more for topping

Chocolate Frosting

  • 1/2 cup butter
  • 2 tbsp cocoa powder
  • 3 tbsp milk {I used 1%}
  • 2 1/2 cups powdered sugar
  • 1/2 tsp vanilla extract

Instructions

Cookie

  • Preheat oven to 350 degrees.
  • Combine cake mix, eggs, melted butter and flour in large bowl and mix until completely incorporated.  I like to use a hand held mixer.
  • Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a parchment lined cookie sheet.
  • Bake for 9-11 minutes {or until the cookies are set}, remove from oven and let cool completely on the cookie sheet.  Repeat until all of the dough is baked.

Chocolate Frosting

  • Combine the first 3 frosting ingredients in a small saucepan over medium heat and whisk until the mixture has melted.  Remove from heat, add powdered sugar, vanilla and whisk until smooth.
  • Using a heaping teaspoon, pour frosting over cookies.  Spread the frosting out over each cookie so that it is going over the sides. Top with additional mini chocolate chips.
  • Let frosting set and serve.  Keep your Texas sheet cake cookies in an air tight container at room temperature for up to 3 days.
