Easy Carrot Cake Sheet Cake Cookies with a Cake Mix

Using a cake mix and freshly grated carrots to create these super amazing Carrot Sheet Cake Cookies is simple and extra delicious with the easy Cream Cheese Glaze. They are perfect for Easter or any day of the year.

  • 1-15.25 box spice cake mix
  • 1/3 cup vegetable oil
  • 1 egg
  • 2 tbsp sour cream
  • 3/4 cup finely grated carrots

Cream Cheese Glaze

  • 8 oz. cream cheese {softened}
  • 1/2 cup butter {softened}
  • 1 tsp vanilla extract
  • 2 cups powdered sugar



  1. Preheat oven to 350 degrees.

  2. Combine cookie ingredients in large bowl and mix until completely incorporated.  NOTE:  Dough will be thick.

  3. Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a parchment lined cookie sheet.

  4. Bake for 9-11 minutes, remove from oven and let cool completely on cookie sheet.  Repeat until all of the dough is baked.


  1. Combine the glaze ingredients and whisk until smooth.

  2. Warm in the microwave until it is pourable but not runny. Spread a heaping teaspoon of glaze on the top of each cookie and spread out. Top with chopped pecans {optional} while the glaze is still wet.

  3. Allow the cookies to set at room temperature until the glaze is set and serve. Store cookies in the refrigerator for up to 5 days.
