Totcho Casserole Recipe

Nachos are transformed when tater tots are used instead of tortilla chips but the best part is that everything is baked into a delicious casserole perfect for dinner tonight.

Ingredients

  • 1.5 lb. ground beef
  • 1-1 oz. pkg. taco seasoning
  • 1 cup black beans {drained}
  • 1 cup corn kernels {I like frozen}
  • 1 cup salsa
  • 1-15 oz. can nacho cheese
  • 3 cups shredded cheese {divided}
  • 28 oz. pkg frozen tater tots

Topping Ideas: sour cream, salsa, avocado/guacamole, jalapeno slices, olives, sliced green onions, pickled shallots, taco sauce, shredded cheese

    Instructions

    • Preheat oven to 375 degrees and spray a 9x13 pan with nonstick cooking spray and set aside.
    • Brown ground beef in a nonstick pan over medium high heat, add taco seasoning and water. Allow the water to cook down for a couple of minutes. Add the black beans, corn kernels and salsa to the meat mixture and stir to combine. Pour the mixture into your prepared pan and spread into an even layer.
    • Top the meat layer with nacho cheese and spread out over the top to cover. Top nacho cheese layer with 2 cups of shredded cheese. Finally add the frozen tater tots in a single layer over the top of the cheeses.
    • Bake for 30 minutes, remove from the oven and spread 1 cup of shredded cheese over the top of the tater tots. Return to oven and continue to bake for 10 minutes or until the tater tots are crispy.
    • Remove and let the casserole set for a couple of minutes. Serve with toppings and enjoy. Store leftovers in refrigerator for up to 4 days. Make ahead of time and freeze for up to 3 months.
