Easy Crock Pot Stroganoff Meatloaf

Ground beef is mixed with simple ingredients and slow cooked in the crock pot with sliced onions and mushrooms all day before the addition of a delicious sauce. Then served over egg noodles.

Ingredients

Meatloaf

  • 2 lbs ground beef
  • 1 pkt dry onion soup mix
  • 1 cup panko bread crumbs
  • 2 eggs {whisked}
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 onion {thinly sliced}
  • 8 oz. mushrooms {sliced}

Sauce

  • 1 can cream of mushroom soup
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Serving

  • 1 lb egg noodles {cooked}

Instructions

Meatloaf

  1. Combine ground beef, dry onion soup mix, panko bread crumbs, eggs, salt, pepper and garlic powder in a large bowl. Mix the ingredients together until everything is evenly incorporated. Move meat mixture to the crock pot {lined with a crock pot liner} and form into a log. Top meat mixture with thinly sliced onion and sliced mushrooms. Cook on high for 4-6 hours or on high for 6-8 hours.

Sauce

  1. In a medium bowl combine all of the sauce ingredients and whisk until everything is mixed well and there are few lumps. Add it to the meatloaf the last hour of cooking.

Serving

  1. To serve, cut meatloaf into slices and serve with sauce over cooked egg noodles. Store leftovers in refrigerator for up to 4 days.
