Prep Time 10 minutes
Cook Time 50 minutes
Total Time 1 hour

  • 1-15.25 oz. box yellow butter cake mix {yellow or white work well}
  • 1 tbsp all purpose flour
  • 1-15 oz. can pumpkin puree
  • 1/2 cup butter {softened}
  • 2 tsp pumpkin pie spice
  • 3/4 cup chocolate chips {I used the mini version6

  1. Preheat oven to 350°.  Combine the cake mix, flour, butter, pumpkin puree and pumpkin pie spice in a medium bowl.

  2. Mix using a handheld mixer {or by hand} until everything is well combined.  Add chocolate chips. Stir into dough by hand to combine until everything is evenly incorporated.

  3. Scoop heaping tablespoons of dough {using a medium scoop} onto a parchment {or silicone} lined baking sheet.  Using the back of a spoon gently press down onto the top of each cookie.

  4. Bake for 8-10 minutes or until the edges are set, they will appear to be a little under cooked but that is alright.

  5. Remove cookies from the oven and let them cool on the cookie sheet for 10 minutes. Move to a cooling rack to cool completely. Store cookies in an air tight container at room temperature for 4-5 days or freeze for up to 3 months.

Recipe Notes

  • If you do not have pumpkin pie spice you can mix 1 1/2 teaspoons of cinnamon, 1/2 teaspoon of ginger, 1/2 teaspoon of nutmeg and 1/8 teaspoon of cloves.  Combine and use what you need.
  • Add walnuts, pecans, cinnamon chips, white chocolate chips, raisins or dried cranberries for added flavor and texture.
