Strawberry Cookie Dough

  • 1 box strawberry cake mix
  • 2 eggs
  • 1/3 cup vegetable oil

Chocolate Coating

  • 1 1/2 cups chocolate melting wafers

Instructions

  1. Preheat oven to 350°.

Vanilla Cookie Dough

  1. Combine vanilla cake mix, eggs and vegetable oil, mix until completely incorporated using a handheld mixer {or by hand}.  NOTE:  Dough will be thick.

Strawberry Cookie Dough

  1. Combine strawberry cake mix, eggs and vegetable oil, mix until completely incorporated using a handheld mixer {or by hand}.  NOTE:  Dough will be thick.

Making Cookies

  1. Using a small cookie scoop, get an even mound of each dough.  Roll each mound separately to get smooth rounds of dough. Then roll both dough mounds together in your hand, being sure to keep the cookie half and half, until you get the right shape.  Place 8 cookies on a parchment or Silpat lined baking sheet.  Bake your cookies for 9-11 minutes.

  2. Remove from oven and let them set on cookie sheet for 10 minutes.  This will allow cookies to cool and set up.  Don't skip this step, it is very important.  Continue until all of your cookies are baked.

  3. Once your Neapolitan cookies have cooled, melt chocolate wafers for 1 minute and stir.  Continue to microwave in 30 second increments until the chocolate is melted and smooth.  Dip each cookie half way into the chocolate and place chocolate covered cookie onto a parchment lined cookie sheet to set.  Store in an airtight container for up to 4 days or freeze for up to 3 months.
