Rainbow chip cake mix and Lucky Charm marshmallows are transformed into super simple and extra fun cookies that are perfect for St. Patrick's Day.
Preheat oven to 350°.
Combine cake mix, eggs and vegetable oil, mix until completely incorporated using a handheld mixer {or by hand}. NOTE: Dough will be thick. Add white chocolate chips and mix in by hand.
Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a silicone or parchment lined cookie sheet. Take 3-4 marshmallows and press them into the top of each cookie.
Bake for 9-11 minutes, remove from oven and let cool on cookie sheet for 10 minutes before moving them to a cooling rack. Repeat until all of the dough is baked.
Store your St Patrick's Day cookies in an air tight container at room temperature for up to 4 days.
