Easy Sausage Tortellini Skillet Dinner

Ingredients

  • 2 Tablespoon olive oil
  • ¼ cup onion {finely minced}
  • 2 cloves garlic {minced}
  • 12 ounces sausage {in casing and sliced}-I used Italian
  • 1 cup broccoli {cut into small florets}
  • 9 ounces tortellini {frozen or fresh}
  • ¾ cup chicken broth
  • 15 ounces Alfredo sauce
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup Parmesan cheese {grated}
  • Fresh Basil for garnish-optional

Instructions

  • Heat oil over medium heat, add onion and cook until translucent. Add garlic and sausage and cook until the sausage is browned, being sure to stir so that the garlic does not burn.
  • Add chicken broth and scrape the bottom of the pan to release any bits of flavor. Add broccoli florets. Followed by tortellini and Alfredo sauce. Stir ingredients together and bring mixture to a boil. Once it is boiling, reduce heat to simmer and cover with lid. Cook for an additional 7 minutes.
  • After 7 minutes remove the lid, add salt, pepper and Parmesan cheese. Serve warm from the skillet. Garnish with fresh basil if desired and enjoy. Refrigerate leftovers for up to 3 days.

Notes

  • Frozen tortellini works; no need to thaw. Fresh tortellini cooks faster, so watch for mushiness.
  • When adding chicken broth, scrape the pan for richer flavor.
  • Add salt at the end; Parmesan brings a salty kick.
  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Freeze in an airtight container for 2-3 months. Thaw in the fridge before reheating.
