Soft & Chewy Easy Chocolate Chip Cookie Bars

Ingredients

  • 1 15.25 oz. box Butter Recipe Yellow Cake Mix
  • 2 large eggs
  • 1/2 cup butter {melted}
  • 2 tsp vanilla extract
  • 3/4 cup mini chocolate chips

Instructions

  • Preheat oven to 350 °. Prepare a 9x13 baking dish by spraying it with non-stick cooking spray, set aside.
  • In a medium sized bowl whisk or sift the dry cake mix to remove any lumps. To the dry cake mix add the whisked eggs, melted butter and vanilla. Mix together using a hand held mixer {or by hand} until all of the ingredients are incorporated. Add chocolate chips and mix into dough by hand until evenly distributed.
  • Pour dough into prepared pan and spread into an even layer. Bake for 20-25 minutes or until the edges of the bars are pulling away from the pan and the bars are turning golden brown. But do not over bake. Remove from oven and let cool completely before cutting them into squares. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.

  • To feed a crowd, double the recipe and bake in a jelly roll pan.  .
