Crock Pot Meatloaf Recipe
Flavorful meatloaf cooked in the crock pot stays extra moist and is wonderfully delicious. It is the perfect dinner idea for anytime.

- 2 lbs ground beef {I used 93/7 or higher}
- 1 pkt. onion soup mix
- 1 cup panko bread crumbs
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp garlic powder
- 2 eggs {whisked}
Topping:
- 1 ¼ cup ketchup
- 1 tbsp yellow mustard
- ¼ cup brown sugar
- 2 tbsp Worcestershire sauce
Meatloaf
Combine the ground beef, onion soup mix, panko bread crumbs, salt, pepper, garlic powder and eggs in a large bowl. Mix ingredients together until just combined, making sure not to over mix {I love to use my hands} or the meatloaf will be tough.
Add meat mixture to a crock pot that has been lined with either a crock pot liner or foil that has been sprayed with non stick spray. Turn the crock pot to low and cook for 6-8 hours or on high for 4-6 hours.
Topping
Combine the topping ingredients in a bowl and whisk until smooth.
In the last 20-30 minutes add topping to the top of the meatloaf. Return lid and continue to cook on low for at least 20 minutes or until topping is heated. Remove meatloaf from the crock pot and serve warm. Store leftover meatloaf in the refrigerator for up to a week.
- Line your crock pot with a crock pot liner! Using a crock pot liner is such a big help with cleanup, you can thank me later.
- Use lean ground beef. This will eliminate having too much fat in the bottom of your crock pot (I like to use 93% lean or leaner). You can also substitute ground turkey or chicken but you should add a bit of liquid to the bottom of the crock pot.
- Use Italian-style panko bread crumbs for some extra flavor! With added seasonings already in the bread crumbs it amps up the taste without an extra ingredient.
- Don't forget to add the sauce for the last 20-30 minutes of cook time. This will give it such great flavor and is another great way to add moisture. If you don't like this ketchup sauce, use your favorite BBQ sauce.
- Don't have a crock pot? Cook the meatloaf on a foil lined baking sheet in the oven at 350 degrees for an hour or until the internal temperature is 160 degrees.
