Cucumber and Pickled Shallot Salad

A simple salad of sliced cucumber, pickled shallots and a 3 ingredient dressing that just gets better with time in the refrigerator.

  • 1 English cucumber
  • 1/2 cup pickled shallots
  • 1/4 cup sour cream
  • 1 tbsp mayonnaise
  • 1/4 tsp dry dill
  • 1/4 tsp black pepper
  • 1 tbsp pickled shallot pickling liquid


  1. Wash and slice the cucumber into thin rounds {1/4"} and add to medium bowl.  Chop pickled shallots into smaller pieces and add to bowl with cucumbers.  Combine sour cream, mayonnaise, dry dill, black pepper and pickling liquid in a small bowl and stir with cucumbers and pickled shallots.  Combine and serve or refrigerate for up to 3 days.
