Yellow Cake Mix Thumbprint Cookie Recipe

A yellow cake mix is transformed into a cookie that is made with cream cheese and filled your favorite jam.

Ingredients

  • 1 box yellow cake mix {15.25 ounces}
  • 8 ounces cream cheese
  • ½ cup butter {softened}
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup raspberry jam
  • ¼ cup powdered sugar

Instructions

  1. Preheat oven to 350°.

  2. Combine softened cream cheese and softened butter in a medium bowl with a hand held mixer until creamy and smooth.

  3. Add cake mix, egg and vanilla to the cream cheese and butter mixture, continue to mix.Once all of the ingredients are combined you will have a thick and slightly sticky cookie dough.

  4. Use a medium cookie scoop to scoop cookie mounds into your hands and roll into a smooth ball. If the cookie dough is too sticky, use a small amount of flour to lightly flour your hands so that it doesn't stick. Place the cookie dough mounds onto a silicone mat {or parchment} lined baking sheet.Use your thumb to make indentations into each cookie that is big enough to fill. Fill all of the indentations with raspberry {or your favorite flavor} jam.

  5. Bake in a 350 degree oven for 9-11 minutes or until the cookies are set. Allow the cookies to cool completely on the baking sheet.Once the cookies are cool, sprinkle them with powdered sugar and serve or store.

* These cookies freeze well for up to 3 months if stored well in an airtight container.
